You are 100% right. About 10 yrs ago I was able to pinpoint several food allergies and the main cause on my migraines was manufactured citric acid.

Really appreciate your bringing this to our attention Heidi! I am late to this video. Recently I bought citric acid to make gummy bears and to put some extra vit c into diet. Yikes! Out of 20 companies researched I found 3 companies that use organic powdered fruits and not citric acid in their products. They are Koyah - Organic Lemon Powder - USA or Mexico Grown & Freeze-dried; Pure Synergy - Organic Berry Power; and Laird Superfood - Organic - A zesty twist on your normal lemon water and the easiest way to jump start your morning. Just add hot or cold water. These companies are not using citric acid per se, but the whole powders of different fruits. Though as ascorbic acid, they are an excellent health drink as well as a very good preservative. Really interesting that the companies listing their products as organic, non gmo and food grade critic acid did not say where the critic came from but had a long list of what it could be used for (laundry and ect.) and did not mention how it could be used in eating.

Citric acid is used in making several varieties of cheese, mozzerella is one, so cheeses, freeze dried also contain it to some extent. I agree with being informed and limiting what you can from our diets, it can be a full time job keeping up with it all. Thanks for sharing this information, we'll read more about it this weekend.

My friend used to make a mozzarella type cheese using rose hips. This was discovered accidentally when some milk spilled in the sink where a tea ball with rose hip in it was lying. Next day - cheese! A neighbor make goat milk cheese over a wooden fire using another herb tea...I don't remember what kind as this was in the 1970's. I mention these because I think it's good to experiment with these methods as illustrated by Rain Country, citric acid is questionable. And who knows how long it will be around? If the SHTF, it would be great to be able to make some cheese from stuff we grow and our animal's milk.

Usually, I use lemon juice to soak my fruits in before freezing. I try to use as natural as possible in everything. I did not know this about modern day citrus acid. Its good to know in reading labels. Thanks for sharing.

Gail, you can also use salt water to keep your fruits from turning. I think it makes apples taste better.

@@revoltiz1 Potatoes have a lot of starch that makes them discolor. If you're going to cook them later, you can put them in just a bowl of water. If you're going to freeze or dehydrate them, I'd suggest par boiling them and then into cold water. How long you par boil depends on the size. My suggestion as an Idahoan.☺️ For fruit, I think I use about 2 teaspoons to a shy tablespoon/1/2 gal. of water.

I no longer eat cheese (or any dairy products), so if I want to add a cheesy flavor to something (like popcorn) I use nutritional yeast. Thanks for the great information.

Always helpful! Can we dehydrate citrus, rehydrate, and use the “juice” to put on fruit such as apples so they don’t brown? Also do you use organic bananas for the banana peel and mint vinegar since you use it in food? Timely video because I was considering buying some citric acid... now won’t be doing it for food reasons.

I’m very glad you posted this. I was deathly ill with aspergillosis for over 9 years and am only recently approaching normalcy (out of wheelchair, regaining bladder function, no new tumors) and people still think I’m overly cautious about substances derived from mold. Interestingly, my presenting symptom (aside from asthma) was a CORN allergy. People think white vinegar is a wonderful cleaner, but hello! It’s CORN. There was a time when I couldn’t be hospitalized bc 85% of medical disposables are made from corn, and my house was toxic too. I strongly suggest that anyone with unexplained headaches or joint pain actually examine how much corn is in their diet. One day we were in the grocery store (2011) and a rash appeared on my hands. It was a produce bags. “Compostable”! “Green”! Oh sure. More fields of GMO corn. And if that’s not scary enough, Google “contraceptive corn” and remember that a certain billionaire purchased Monsanto years ago, and now he pushes vaccines.

Yep, sometimes it is made from GMO potatoes but usually from GMO corn. This is one of the big reasons I started making my own years ago

Rose Zingleman people think you’re overly cautious. Maybe they wouldn’t if they felt the same! I keep reading bad things about Monsanto.... I also don’t take any vaccines or flu shots. All of my children have had the measles mumps rubella but that’s about it....Obviously I did as a child. Also not going to take a Covid vaccine although I don’t really know anything about that but how could they come up with a vaccine so quickly..... anyways I’m just rambling at this point ....hope you keep feeling better!😊

Dear Heidi, thank you for all the information!! I have to admit that I never thought about these issues with citric acid 🤔 I use it exclusively for brightening white laundry from time to time. There's a company here in Germany called "Heitmann", they produce organic citric acid. I hope, you can get it in America!! For everything else I use (thanks to you 😉) my homemade vinegars. Hi Maren, be cautious - organic citric acid can readily be found in the states, but it is all manufactured using black mold, even if the host is organic. Excellent that it brightens white laundry tho!

This is a personal story I have. One day about 3 weeks ago I developed an insanely painful hip then pain all over, I had lactic acid build up in my body and ached all over, could hardly walk, then rest, make it though work barely and repeat, I did not know what was causing it but I was pretty much an invalid all of a sudden. I narrowed it down to a new food, pickels, I've been binging them daily lately, same bottles, I noticed they used citric acid on ingredients label. During the 4 day weekend I ate light and my pain eased up and I forgot all about it, then on Sunday I ate 6-9 small pickles, within 20 minutes I started seizing up and was in pain for the next 48 hours, 72 hours later I was all clear. I researched citric acid then found out it's made from mold! I researched citric acid function in the body and then found out it's one of the first processes in the Krebs cycle, so basically I was being poisoned and will ALWAYS from now avoid ANY non lemon etc derived citric acid! Be careful!

Glad you found out!!! Glad you recovered. I bought some today as my toilet is clogged. I breathed a little in opening the container. Now feel it in my body, tongue, etc. Am chemically sensitive. Took some activated charcoal. Now some crackers. Feels awful. Now to recover.

Mold derivitive citric acid (synthetic) is toxic. Natural citric acid from lemons is what you should use...all organic and no additives. Citric acid sold online is mold citic acid made in a lab. The whole problem is that the FDA doesn't make manufacturers decipher which is in it. Rest assured if it doesn't say, it's synthetic mod citric acid because it's cost to make is barely anything. The all mighty dollar and greed Trump anything.

My daughter was diagnosed with celiac at age 30. We always thought she was attention seeking when she complained of a belly ache every day. I feel horrible but I took her to drs repeatedly. Why it took so long to figure it out, I'll never know. She was even hospitalized for the pain! She actually figured it out herself. Her dx was recent. Where can we find educational meetings? Thank you.

My question is... is the canning citric acid also an issue? I only ever really use it if I dont have lemon or lime juice in a recipe. But it's a great way to add tartness to foods and it's specifically meant to help with canning.

Can you recommend a brand that comes from lemons? I found a few "organic" labels but none that explicitly say them come from lemons for citric acid. I currently use the NOW brand for cheese making.

I know there are some out there but I personally have not found any. I just use homemade vinegar instead, as long as it has a pH no higher than 3.5

I watched another of your videos about vitamins and you said you really like the NOW brand. I’m looking for a magnesium glycinate supplement and found the first ingredient in the NOW brand is Citric Acid which you say in this video is not good. How can I find out what type citric acid NOW is using…any suggestions?

I saw here while back that the citric acid can be used for pickling gold or silver objects after they have been heated to solder them to remove the firescale instead of using a mixture of sulfuric acid and water, so there is another use for it. . I'm glad youmade this video, I just got some the last time I went to the store, I was going to try to use it instead of vinegar for pickling to get rid of that strong vinegar taste. Thanks

I love the information. Have you ever heard of nutritional yeast for that cheese flavor. You can add it to popcorn or make cheese sauces. But it's just a baked yeast that ends up tasting cheesy. It's a one ingredient shelf stable cheese flavor. Thanks for a great video.

I am not much into pickling but have used it before in canning beets but I still pressure canned them. That vinegar was a higher pH so would not have been good for using to preserve

So, in a tincture that I am making, that asked for citric acid in order to extract the alkaloids out of the herb, I can use real lemon juice instead, to get the ph down to the right level? I bought a food grade citric acid that said it was non gmo certified. Does that mean it could still have mold? I’m a little bit confused still.

lemon juice or vinegar are both fine in that case. as they are an acid and will lower the pH, even homemade vinegar. Non GMO does not mean it was not grown on black mold.

could you dry your lemons and make lemon powder equivalent to citric acid? Just wondering. I have a huge lemon tree and we get so many lemons we never know what to do with them all. We give them away, I dehydrate them. I don't want the peel because its bitter. I just don't know how to make the lemon part be turned into powder.

I personally WOULD recommend keep the peels on when you dehydrate them but I would not know how much you would need to replace citric acid since it is something that is extracted from lemons (or used to be anyway). My guess is you would need to use two to three times as much. Personally, citric acid is something I have never used for preserving though I have added lemon or lime juice to my salsas and homemade vinegar to my canned tomatoes to increase the acidity for better preservation when canning.

I have a 5lbs bag of millard citric acid for making colloidal copper and what nots. I couldn't find anything other than ingredients state citric acid, organic, and non GMO. Like you, time is very limited and it's a very good question well worth finding out. I submitted an inquiry to the company about how they make it. Let's see what they say... 🤔

Oy....I learned this the very hard way! I read that I needed to load up on Vitamin C a few years ago (before I chucked all my vitamin supplements!)...so I found a "good" brand and went to work on it. I have arthritis anyway, so I just thought it had gotten worse when I started bulking up on C. Then I read that most C supplements are made from CORN. Corn's a major source of trouble for *my* knee pain! Even if it's organic...rats. So, I found a supplement made from cherries. Still a problem! I did some more research and found that, if you tend to overachieve in the iron department (and I do), Vitamin C, from any source, can cause the iron to be even more of an inflammatory issue. That's why they suggest that people with anemia take their iron with orange juice (or something like that)....it helps the iron get into the cells more efficiently. Great if you're anemic....but not if you overproduce iron. I got rid of all my various C supps, and now get my C naturally, and very moderately! :) Thank you for another great lesson, Heidi!

Wow, thanks for the heads up. Isn't it totally crazy where most of our grocery store food comes from? It seems like I recently saw a video on making lemon juice powder by freeze drying the juice. Not sure. I binge watch stuff then don't remember half of what I watched or think I mixed things up and not sure I didn't put the wrongs bits of info together. I'll see if I can find it.

What I saw was freeze dried bone broth, but a quick search showed people freeze drying citrus juice and also powdering dehydrated citrus fruit slices. Couldn't find anything quickly that said you cn use it hoses ways in place of the citric acid you buy. Many of my health conscious friends buy citric acid powder from Bulk Supplements. I have no idea about that one, but worth looking into. Concerning cleaning; citric acid is my go to for hard water stains and deposits, esp on my stainless steel sink and any glass jars that had water ivaporating in them for a time. Works faster than vinegar to get that crust off.

Citric acid is in high-end electrolytes, shampoos, conditioners, "healthy" dishwashing liquids and hand soaps! It makes me itch like crazy. So hard to avoid it.

Now here is the major question. I’m glad you put out this video. That Heather on YT said that you have to have citric acid in your tomato sauce even if you pressure can it. She pulled out the USDA book that states you do. But then she turned around and canned chili beans not per USDA instructions. She made that clear. So I’m like “you’re going to actually can beans incorrectly. But you’re worried about citrus acid going into tomato sauce that’s pressure canned???

@@bassskirtgirl I mean that was the point of me getting a pressure canner. First I didn’t want to put lemon juice in my tomato sauce yuck. Then I found out about the citrus acid. Then I found out from Heidi how bad the citrus acid was thank God. Because I’ve been having some problems. Nothing much but sugar really bothers me and package food really bothers me. Well I think it’s mainly the citrus acid. But AnyWho that would be a point of getting the pressure canner to get away from all those stupid things and tomato sauce😂😂😂😂❤️

The only thing we have ever added to tomatoes was a pinch of salt when canning. Most of the time it was just a hot water bath. 3 generations of families.

I just keep thinking of different exclamations about this, so frustrating! Industry or whomever, has taken a precious grain (corn) and morphed it in to some of the weirdest things. I always read the comments of your videos and didn't know white vinegar can be a corn product too. I'm wondering if the product True Lemon or lemon crystals that I found at Nuts dot com are equivalent to citric acid. Funny how citric acid usually has pictures of lemon on the package, what a deception. I can't thank you enough for all of your research and sharing

Yep, it is common to use photos of natural things because people will assume that is what it is made from but try to find anything about it in the description and it is not there

@@RainCountryHomesteadlike putting pictures of farm cottages and false baned like "somerfield farm" on meat products from intensive (cruel) farmed products. I dehydrate unwaxed organic lemons in slices to keep the juice inside it to use as sibstitute for fresh lemon. We also keep lemon seeds and use them to produce natural pectin

@@bethraisbeck368 just soak the seeds in a little water. The water becomes thicker, and that is added to whatever needs the pectin. I have never tried crushing the seeds because they are easier to remove from the solution whole, but I guess I that might help release the pectin more quickly.

Just picked up my first citric acid for preserving - haven't even opened it yet. I got it from Azure Standard and read the ingredients. It says Citric Acid from sugar beets and sugar cane. I didn't know they had citric acid in them. It does say it is Non-GMO but now I wonder if it is also made from black mold. I will send an email to try to get the answer. Thanks for the info.

Please mention me Matthew McIntear in your prayers. I'm feeling a growing overwhelming feeling and it's making me feel maybe my mom is right that I shouldnt preserve meat for the shelves. Im bedridden and she's scared to even learn it's possible to do. She rather think she can rely on the grocery stores whenever she needs something right when she needs it so she has nothing stored and keeps saying all the time that she will buy extra canned goods when she has extra money but that's just a way to get me to leave her alone about the importance of prepping something. My situation and Her thought process is already overwhelming for me since I am bedridden technically in her care right now. I recently oven canned brownies and I followed the instructions but didn't consider the time nor did I do the standard tooth pick in the center test because in this bed all I was thinking was to hurry and wipe rim and put lids on so they can seal which they did. But after two days I checked and opened one to check and the middle is completely not cooked. 7 pints of undercooked sealed cans of brownies that I already happily told everyone could last a year or two and all that rushed to my head was maybe my mom was right. Not about just waiting to hopefully be able to offered canned food when we need it as we need it but right that maybe I shouldn't do it. Its so hard to agree with that because in my heart I know with a little help or even support from family it would be so successful for all. I'm trying to get out of the if only and just face the facts that it's the Lord's mercy and I in this and He has blessed me to be able to watch so many fearless believers that's prepping the best we each can. That gives me joy to know you all are out there but meanwhile in here I feel if I accept my moms way and not try to can anything Its like just waiting for death. I'm sorry for the long comment but I'm tired of crying inside and I knew you would mention a prayer for me. Can things, but things that would go bad if not dehydrated, canned or frozen. I.e. fruit, veg, meats. I don't bother canning pie filling, just can fruit and add your desired spices and such later. Makes things more versatile. Beans are another excellent thing to can, along with jam/jelly/preserves. As for canning brownies, I think it makes more sense to vacuum pack premade brownie mix. Even put it into mason cars, close tightly, and it should keep at least a year in a pantry or area not in direct sunlight. You can bake outside in a cast iron pot if need be one day, but canned breads/cakes to me just seem like taste and texture would be compromised. Look at the YT channel Mary's Nest for premade mix recipes, she's a sweet lady and I think you'll enjoy her content if you enjoy this channel (which is also wonderful). Many folks don't see the need to prepare or heed the Word of God. Didn't He say not to be scared of their faces (Jeremiah 1:8)? Don't fear, keep listening to God, and just focus on Him. Do what you can, but seek first the kingdom. You'll be just fine in His hands.

We all have so many stories about the mercy God has shown and some day we will be able to share them all with each other of how we overcame. Just the thought of others stories plus the ones that's shared her on KZfaq motivates me to share but keep going, keep hoping and keep repenting. I do enjoy Mary's Nest as well especially her broth videos. But for the brownies I only thought to make them to use up a ton of bananas I had frozen before trying keto and carnivore during my smoothie making days. I didn't want to just toss them so I could have either dehydrate them or bake them with all the water they had come out defrosting. Lol it was a really good learning experience for me that the results definitely caught me like a upper cut in a soft spot. I thought it would be a opportunity to add to my canned banana bread I made recently for the same reason. It's definitely a lesson learned. But I salvaged all of them by opening them all and freezing. It was a no egg or oil brownie with peanut butter so I caught it just in time after a day in order to not waste. I think you are amazing for continuing to move forward. You may not be able to accomplish what you envision, or at the speed you would like to, but you continue on.

I have always used vinegar, but not store bought white vinegar because it is also made from GMO corn. I use my higher acidic homemade vinegars (need to be at least 5% acidity or no higher than a 4.0 pH, 3.5 is better)

I just bought a bag of non gmo organic citric acid and it's a white powder in bag. Now I am going to have to research it further before I use it. We do buy a lot of lemons and use them in everything from tea to pasta sauce to glass cleaner and dried lemon powder.. so perhaps I'll stick to those. hmmm your videos are always so helpful. thx Heidi

Yes, Israel has citric Acid from lemons, that have nothing added and the best salt clean as you can get becuz its has the cleanest air and the most oxygen due to the lowest place on the planet. He Dead Sea has some of the best salt out there..
