CKP style spicy Egg curry
Ingredients
Fried onion Masala blend video
• Fried Onion Masala Blend
8 hard boiled eggs
1 large onion finely chopped
2 medium tomatoes finely chopped
1/2 cup coconut milk
1 bay leaf
Few black pepper, cloves and small cinnamon stick
Pinch of hing
2 tsp chili powder
1 tsp turmeric powder
1 tbsp ginger/ garlic paste
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp Garam Masala
1 tbsp fried onion masala paste(optional)
3 sliced green chilies(optional)
5 tbsp cooking oil
Salt as per taste
1tbsp lemon juice
Few curry leaves
Chopped coriander
Method
1. Peel hard boiled eggs delicately keeping intact yellow. Do not cut yellow.
2. In pan heat oil and add dry spices. Sauté for few seconds
3. Add chopped onion and sauté for couple minutes on medium/ low heat.
4. Add 1/2 tsp salt
5. Add chopped tomatoes and sauté for 2 minutes.
6. Add couple tsp of water and then add turmeric powder, chilly powder, coriander powder, cumin powder and ginger/ garlic paste.
7. Mix well till the raw smell goes away.
8. Add 1 cup water and let it simmer.
9. Add salt and lemon juice.
10. Add coconut milk and little water if needed.
11. Cover and let it simmer for 5 to 7 minutes on low flame.
12. Add Garam Masala, curry leaves and green chili
13. Finally add peeled boiled eggs and garnish with coriander leaves. Boil for 30 seconds only. DO NOT OVER COOK.
14. Serve with hot steamed rice or chapati/ roti.
