I don't know if Claire will understand this, but I have made hand made noodles before and I also had the same problem with the dough being too tough to work with, in that case actually it's better to let the dough rest for longer. As u knead the dough the gluten in the dough makes the dough tougher and tougher, so by letting the dough rest and therefore letting the gluten rest, the dough will be softer and easier to stretch to make noodles. And allow u to do the trick where u see Claire doing it and hitting the dough on the table to stretch the noodles
