Recipe:
To make zebra cakes, start by whisking ¾ cup cake flour, ¼ teaspoon baking powder, ⅛ teaspoon baking soda, and ¾ teaspoon kosher salt in a medium bowl. In a separate bowl, beat 3 egg yolks and ¼ cup sugar with a hand mixer until ribbony, then stream in ¼ cup neutral oil, ¼ cup buttermilk, and a teaspoon of vanilla extract. Pour the yolk mixture into the flour mixture and whisk until smooth. In a separate bowl, combine three egg whites, ¼ cup sugar, and a pinch of cream of tartar and beat with an electric mixer to stiff peaks. Fold the whites into the batter, then scrape onto a parchment-lined half sheet tray. Bake in a 225-degree oven until springy to the touch and golden, then let cool. Trim the edges then cut the sponge into 6-cm-wide strips and trim them horizontally so they’re about 7mm thick. Freeze the pieces.
To make the filling, combine 3 ounces egg whites, 5.5 ounces of sugar, ½ teaspoon kosher salt, and a pinch of cream of tartar in the bowl of a stand mixer set over a double boiler and stir until the sugar dissolves. Whip the egg whites until firm peaks form and the meringue is room temperature, then gradually beat in 10 ounces of room temperature butter. Scrape down the sides of the bowl and beat in 1 tablespoon of vanilla paste. Pipe a layer of buttercream onto the surfaces of the cake strips using a basketweave tip, then sandwich the cake together. Chill briefly, then cut out hexagons using a serrated knife and template. Chill the cakes.
In a large bowl, whisk together 4 cups powdered sugar, ¼ cup hot water, ¼ cup light corn syrup, and 1 teaspoon vanilla extract until smooth. Whisk in 142g melted white chocolate, then thin with more hot water to the desired consistency. Place over a saucepan of hot water to keep warm. Spread a thin layer over the tops of the cakes, let set at room temperature, then place the cakes one at a time glaze-size down on a large fork and spoon the glaze over the cakes until fully enrobed. Place on a wire rack and let set. Pipe thin lines of melted chocolate over the surfaces of the cakes in a wavy pattern and let set.

So happy to have these revived. The one aspect that would be great to have back is seeing others try the results. Whether it be the crew, husband or random friends with cooking experience. It was always great seeing peoples reactions to Claire's creations in addition to her tasting notes and analysis.

I'm so happy that you've managed to find a way to revive this series after the trauma of Gourmet Makes and BA. You seem a lot more comfortable in this environment being able to recreate stuff and much less stressed over it. I remember I used to watch these videos Claire did back in 2019 in my first year of college. At the time, I was majoring in nursing, but I knew that wasn’t what I wanted to do. Now, I’m in my fifth year of college and I’m majoring in food science where I do exactly what she does in my R&D roles. I really enjoy it and hope to do more in my future career!!

100% Agree. It should be faithful - to a point. Like the Drumstick cone size? Doesn't need to be measured with calipers. Zebra Cakes? Right shape and look and composure? Absolutely. A better cake and cream? Why wouldn't you make it better!? Love this, so happy to have it back

I really hope she enjoys this.. I feel like there's a difference in her demeanor when she's doing recipes she's made vs trying to recreate another recipe... I'd rather her do the stuff she likes to do than trying to please an audience that doesn't want her to do anything else except for remaking recipes

I'm so incredibly happy this show is back. I love the new intro too! Feels really fitting. The slightly funkier vibe fits the show's vibes much better. I'd love to see some more candy bars eventually. Those were always my favorite episodes. Right combination of challenge and fun.

I love these videos. I love the home setting, the more lowkey energy. I LOVE the guys behind the camera coming in with comments. I love the editing - the little faces put on things, the graphics... just a great series and we are only on episode 2.

Definitely! The old Gourmet Majes episodes were sometimes stressful to watch as I could tell that she was under a lot of pressure, especially the snacks like skittles! :( These are so much more chill and it’s much more relaxing to watch.

Hey Claire! I’m one on the chief researchers at Little Debbie who helped to develop the Zebra Cakes. The enrobing technique you used looks exactly like what we did in the test lab! The viscosity of the coating and the way it slowly dripped off in thick ropes after it was lovingly applied was perfect. The ladies here in the test lab said to tell you that this part brought back a lot of fond memories for them. We were so close to conclusion and they knew that we nailed it when they saw that perfect coating of milky white goodness running off. It was hard, but extremely satisfying. Amazing job!!!

@@vcross05 Thanks, Vinny!!! I’ve been extremely lucky to have such a fun, satisfying career doing what I love. I really enjoy the work and that’s what keeps me tirelessly pushing myself forward day after day. I was also involved in the development of the patty melt too. That project was especially rewarding because I got to showcase new skills and my amazing, extraordinarily talented female colleagues in the test lab all loved the hot, fresh meat I served up daily during the long R&D process. There was a heck of a lot of D, I’ll tell ya, but they never complained even once and we got it done. Have a wonderful week! Harry

You could try Red Lobsters Chedder Bay biscuits, I'm guessing they'd be pretty simple but there is something about that taste I can't get over. Whenever I make their boxed version I always cook them in a muffin tin so they're uniform

It is the excitotoxin additives - the non food chemical isolates or constituents taken from food like soy protein, pea protein and "natural flavorings" which usually ends up being free glutamic acid - like the G in MSG - they add that excites your brain before destroying brain cells that makes you THINK you love the taste. I'll take a tasty treat with a little vanilla color over extra stuff for whitening like titanium dioxide. I always learn something when you turn the kitchen into the lab. This time I learned a bit about buttercream AND how to influence crumb size when making a meringue. Fantastic as always, and it still had to be better than pop rocks!

To be honest, you're really not missing anything. The store bought ones are actually disgusting, and I fully recognize that when I eat them, I just have a heavy nostalgia factor that makes me want to eat it even though it's really not great.

I saw this really funny reel the other day, where a page that teaches you Chinese phrases was doing a "packing a suitcase" video, where they have you different phrases about packing, and literally every other step was "remove the cat". 😂

I guarantee that the titanium dioxide is used as a white food coloring. It's pretty common in mass-produced baked goods to get that pure white color
