Chicken Cacciatore (Hunter's Chicken) is such a great recipe! I encourage you to use skin-on chicken thighs and chicken legs for this classic Italian chicken recipe. The crispy skin along with the combination of oil-cured black olives, Sicilian green olives, peppers, onions, and tomatoes all in a hearty white wine tomato sauce is truly the best! I hope you make and enjoy this classic chicken alla cacciatore recipe.

INGREDIENTS:
- 4 pounds chicken thighs and drumsticks
- 1/4 cup olive oil
- 2 medium onions - sliced
- 1 celery rib chopped
- 2 bell peppers - sliced
- 6 cloves garlic - minced
- 1/2 cup green olives - pitted and chopped
- 1/2 cup black oil-cured olives - rinsed, pitted, and chopped
- 28 ounce can plum tomatoes hand crushed or blender pulsed
- 3 ounces tomato paste
- 3/4 cup dry white wine
- 1/2 cup low sodium chicken stock
- 1/4 cup fresh parsley - minced
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
NOTE:
- In this video, the chicken was braised in the oven. In the print recipe below the step by step instructions are for the stovetop method. Either way will yield excellent results!

"Don't think you have to everything perfect" is the best advice. The "do it if you want or don't if you don't" advice is why I subbed to this channel. After watching people tell you how to make *perfect* scrambled eggs this channel is a breath of fresh air.

I absolutely love watching you cook. Your recipes are almost the same as my Italian family have handed down through the generations. I am second generation Italian. Both set of grandparents came from Italy. I am the only renegade, I now live in CA. I found a great Italian store for all the good ingredients. I love that you say don't do everything perfectly. That is the way I learned, no exact measurements. Thank you, because I feel I am back home on the east coast at my relatives, asking "didyoueat", all one word. I made this recipe tonight, it was as good as you made it look!

I absolutely agree. To quote Captain Barbossa: “Recipes are more like guidelines than rules”. Some of my greatest “signature” dishes are modifications of existing “recipes”. Actually they’re just solid techniques with different flavor profiles.

I love watching you cook I love listening to you describe the techniques and the ingredients. I feel bad I live so far away in Edmonton but we have an excellent Italian Centre that has an amazing deli and other selections similar to yours. You clearly love cooking. This looks DECLICIOUS - I definitely need to try it this way! There really are so many recipes throughout Italy for making chicken cacciatore. I guess it depends on where you're from. In the Puglia region where I'm from - it's all done on the stove top - it's primarily a sauce (whole peeled tomatoes crushed with hands) cooked with garlic - and red or white wine - then as the sauce is cooking we submerge previously browned chicken pieces to the sauce - salt, pepper, and the key ingredient where I'm from is oregano. We cook the chicken in the sauce on the stove top until the meat practically falls off the bone - because of this many people remove the skin. I do. Sometimes they cook with the skin because it adds more flavor, but remove it before eating. We use the sauce over pasta with grated cheese. The aroma of this simplified version is amazing!

This is definitely not the traditional way. My Grandmother made it the way you describe right on the stovetop. We did eat the skin, but I was never that big of a fan of it when it was mushy. Thanks for liking the video.

This is my all time favorite Italian dish! I made it for the first time probably 20 years ago and it was the long intense version but it was sooooooooo delicious. I am going to try this one for sure. WOO HOO!

I made this Thursday night and it was delicious. I had to skip the olives because of the salt. I used 8 bone-in chicken thighs red roasted pepper and eggplant for the hunters. But the most important thing is this recipe is the searing and the braising with skin side up for the finish in the oven on top of San Marzano tomatoes. Pecorino Romano and parsley on serving. Tender, and juicy chicken, full of flavor. This is another winner James. And didn't have the recipe under my nose. My mother never used recipes. After watching you, it becomes intuitive. We have lots of leftovers, easy to warm up in a pan. I am throwing out the microwave. It ruins well prepared food like this.

I made Cacciatore for the first time when I attended a knife skills class many many years ago. I guess they used this dish because we did a lot of chopping, etc. I happen to love cutting up veggies, etc. A satisfying task. It was a very simple recipe, but a DELICIOUS dish! Your version looks equally delicious! Thanks for sharing.

I made this yesterday, and it was great. I had to use crushed tomatoes, because that is what I had on hand. I also added 1 carrot and mushrooms. I should have added capers, but I just didn't think of it. Overall, this dish was excellent.

I have my favourite Cacciatore recipe that I have made for decades. It is my comfort food. After watching this video I will try some of your techniques to mine. I like the way you keep the skin crisp and cook in the oven. One thing that enhanced my Cacciatore is fine blending a small onion and then sautéing it to add to the mix.

I love this dish and have made it for years, but I do it all stovetop. I love the idea of adding olives, which I love. I also like mushrooms in mine. I've always pictured those hunters finding mushrooms in the forest or wherever they got their meat.

You cook like my Dad ...casual but always delicious. He put Onions, peppers, mushrooms, carrots, parsley and potatoes in his cacciatore but think I will try with capers and olives next time.

Yeah, a $700 olive (crown)! I have a recipe from Australia for Cacciatore. It's very good, so like a Puttanesca. I throw an anchovy in there too. I'd really like to try a rabbit Cacciatore ; )

I always thought cacciatore had vinegar added which I tried doing and thought was a pain in the a*se, so I use a kind-of Norma [tomato and melanzane, as I'm not that keen on peppers 🤢] sauce with peas added at the end. SCRUMPTIOUS, like your superbly presented dish here👍👍👍👏👏

@@SipandFeast Wow Jim! That was so satisfying. Fun to cook and so good to eat. The Mrs was eating it making sounds I've not heard since... well... a while. Ha ha. The boy wolfed it down too, but I think it was the bread he was most enamoured with. Anyway we all had full stomachs and orange haloed smiles at the end. I followed your recipe exactly and I took your advice and snuck in a few mushrooms, but I did take the liberty of adding just a pinch of tarragon. It worked very nicely. Thanks for that recipe. It'll be one that we revisit again and again. Bless you.

Setting up to cook and realizing you accidentally bought olives with pits is the WORST. It's like, "we're eating late tonight guys, I have to take the pits out of FORTY OLIVES."

Hi, JIm. I am making chicken cacciatore (hunter's chicken). I was watching the video today, and it seems that the video recipe is different from the written recipe. I prefer finishing in the oven as opposed to simmering on the stovetop. Any recommendations?

I typically use sauvignon blanc, but any dry unoaked white will work well. Hope you enjoy it!
