Tradition and Authenticity are different things. Traditions are a product of a particular place and culture, but those do change over time. Every cuisine is continuously developing and will also invariably change when introduced to other places. The authenticity of these dishes stems from the Chinese immigrants who originally created them using China's regional cuisines as their framework.
