Hi there!!😍
This video is about 'How to make cocoa velvet macaron shells'..🍫🍫🍫
There's no coloring in it, I used only cocoa powder.
And I used a whisk when I did macaronage because it's a fool proof method for beginners.
You can also watch other tutorial videos about what tools I used when I did macaronage on my list. (spatula whisk mixer)
I don't dry at room temp, put in the oven
immediately after piping (not rest).
And dry in the oven at high temp for 2-3
min. This is very fast, convenient tip!👌🏻
If you have a regular oven, you can dry
at room temperature as you used to.

1. What is oven shower..??
- The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
2. How to dry in the oven..?? (high temp.)
- 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
Look at the subtitles in the videos, there is detailed temperature.
3. What is the baking mat's name..??
- This is called a teflon sheet.
4. How long do you whisk meringue or do macaronage with mixer..??
- It's not important how long I did.
Because we have different machines and environment..!
You should check the cocsistency of meringue or mixture frequently.
5. What kind of colors do you use?
- Chefmaster liquid colors

- My ovens are UNOX 135 and convection type.

- I made all templetes myself and I am not
sharing now.. Sorry..! 🙏🏻🙏🏻
10. Do you leave or bake immediately..?
- As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
It is a very useful and convenient tip to reduce the time required.
Also you can get shiny and smooth shells.

Recipe: Merengue 80g white egg 75g sugar Dry part: 95g Almound flour 85g powdered sugar 5-10g cocoa powder Oven pre heat 120° Oven drying open door 90-120° 2-3min Bake 14min Oven shower 2min.

코코아가루가 들어가서 휘퍼로 나쥬가 가능한건가요? 슈가빈님은 기계로 나쥬를 하셔서 같은원리인것같은데 휘퍼로는 마카로나쥬하는걸 처음봐서 신기해서요!! 슈가빈님은 진짜 쉽게쉽게 슉슉 하시는것같아요👍👍

Hello, I make all kinds of macarons, they come out very nice, except chocolate ones! Today I threw away 4 batches, they were a mess! I’m in humidity of 75% too. But with air conditioning on, it takes non- chocolate macarons to dry fast. Any advise? Thank you

@@noraininsaman3803 It depends mostly on the humidity. If dry, maybe 20 minutes. If humid, maybe up to an hour or more. A fan or a dehumidifier or an air conditioner can help. You want them to develop a 'skin' which when you touch doesn't stick to your finger. And they're "macarons".

I am confiesed here 1. Preheat oven to 120°c 2. Switch off thr oven 3.keep the tray inside, oven door open little for 2-3 minute 4. Close the door of oven, tray onsdie the oven, et the oven to 140° and bake Is this right. I have gas oven, heat coming from down is ocen drying is possible ? Pleaae some help me

Please share macaroni drying technique, I live in Australia and it took 3 hrs to dry out, and I didn't get feet at all, bit taste was good, bit it never looked like macaroon, it always spread more than template, I am careful mixing and I am not over mixing

She dries in the oven, 2-3 minutes at 120C with the door open, before she closes the door and raises the temp for baking. It's explained in the FAQ.

Hi, can we bake 2 tray at the same time? Or if we can not, how should we treat the remain of the batter in the piping bag? Should it store in room temp in a sealed bag or we should keep them in fridge.

That would depend on your oven. Unless its a semi-industrial oven, one tray would be best. Also, batter can store up to 4-5 hours in the sealed bag in room temp. Don’t put it into the fridge.

I always bake 2 at a time. I have a standard Samsung consumer convection oven. I make enough batter for 4 trays, pipe it all out at once and just wait for the first batch to finish before putting the 2nd batch into the oven.

That question is difficult to understand as written. If you're asking how long to leave the trays in to dry, Sugar Bean says 2-3 minutes until the oven reaches 120C again. If that doesn't answer your question, maybe ask again using different words.

Buy one? One thing to do it to feel the mix with your fingers. You want to tell when the sugar is dissolved and it no longer feels gritty. Also, if you know how a baby's milk is supposed to feel when heated, you can use that as a guide. That's a better way to tell as it's a warmer and higher temp.

Warm to 120C and put in the macs. Leave them with the door slightly open for 2-3 minutes. Close the door and raise the temp to 140C for the baking.

As it clearly says in the video, 80g egg whites and 75g sugar. If you don't have a scale, beg, borrow, or even buy one.
