I added too much ragi flour so the insides were dry in the one I made, I’ve adjusted the recipe below to get it right 🙈 Not all experiments go as planned you see 🤭 The chocolate coating was bomb though, I loved it, made chocolate bars with the leftovers 😁
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
Filling
🥥Fresh coconut - 1
🥥Coconut water - 1/4 cup
🥥Coconut milk powder - 1 cup
🥥Desi khand - 3/4 cup
🥥 Ragi flour - 3/4 cup
Chocolate coating
🍫Desi khand - 1/2 cup
🍫Cacao powder - 3/4 cup
🍫Coconut butter - 3/4 cup
🍫Vanilla extract - 1 tsp
𝐌𝐞𝐭𝐡𝐨𝐝
👩🏻🍳 Blend the fresh coconut fine by adding in some coconut water.
👩🏻🍳 Cook the above mix, coconut milk powder and khand. Just to get it a bit dry and for the oils to release.
👩🏻🍳 Roast ragi flour, roasted & chopped peanuts and add it into the above mix to make a dough. Let the dough have a moist and well hydrated consistency by adding ragi flour gradually. (This is where I messed up)😅
👩🏻🍳 Then make the chocolate coating by blending all the ‘coating’ ingredients until creamy, adjust consistency by adding coconut butter.
👩🏻🍳 Dip the filling into the coating, place on baking sheet for ease of removal and refrigerate.
