I hope you didn't get in trouble! You can use either one, my son doesn't like coconut, so if he's around, then I use refined oil, but my preference is to use unrefined as much as possible.

@@bungarin4041 I believe any company can call their coconut oil "virgin" because it doesn't mean anything, there are no regulations about what makes a coconut oil virgin or not, so I don't even pay attention to that labeling, I look for organic and then buy refined or unrefined as needed or desired.

I'm sure it drops a bit, but the electric skillet will try to regulate itself and come back up to temperature, doesn't seem to mess the recipe up too much.

i fry in refined coconut oil too, ive made potato fries and boneless chicken tenders and they are really good. wish more restaraunts got away from the nasty canola oil

I generally use refined oil, which should not smell as much of coconut, but it shouldn't smell off or bad either. If coconut oil isn't working for you I also like avocado oil, which is very neutral.

they both cook the chicken just fine, but the biggest difference is that unrefined smells and tastes much more of coconut, and refined oil does not, not everyone in my family is in love with coconut, so I use refined oil, just to be nice - and I use coconut oil because I don't like using the industrial overly-processed oils, like Canola or Crisco.

If you use unrefined coconut oil, then yes, it will taste like coconut. But if you use refined coconut oil, then no, it won't taste like coconut. I almost always use refined coconut oil when making this recipe.

No, I don't wash my chicken. Or pork. Or beef. Instead, I cook it. That way I don't splash dirty chicken juice all over my kitchen when washing it, and the high temperature of cooking will kill whatever it is that people are worried about and trying to wash off of their chicken.

Homeskillet, I like it, my older brothers used to call me Homeskillet! I've tried it both ways, but since I've seasoned the buttermilk for the brine, and make sure to drag a fair amount of the brine back into the flour when coating each piece, the chicken gets decently seasoned already. If you'd really like to kick it up, by all means, season the flour in addition to the buttermilk brine.
