Ingredients:
¼ cup white sugar, or sugar of choice ¾ cup butter or margarine
2 egg whites 1½ cups all-purpose white flour
¾ cup packed brown sugar ½ tsp sea salt
1 tsp vanilla extract 1 cup unsweetened coconut
1 cup partridgeberry jam, or jam of choice
Method:
In a medium bowl, cream together butter and white sugar, then add flour and sea salt continue mixing until all combined.
Line a 9 x 9 inch pan with parchment paper, then spread flour mixture evenly in the pan. Then evenly spread one cup or more of partridgeberry jam over uncooked crust, or use jam of choice.
After in another bowl, add two egg whites and whisk until it starts to form a stiff peak. After adding brown sugar, vanilla, continue mixing until all combined. Then fold in the unsweetened coconut well.
Spread egg mixture over partridgeberry jam or jam of choice, preheat the oven to 350ºF and bake coconut squares for 30 to 35 minutes or until golden brown.
When baked, remove from heat and let cool. Then remove parchment paper from the pan and place on the counter, then cut into squares. Enjoy
Bonita’s Tips:
Use jam or filling of choice, I’m using homemade partridgeberry jam….
Cream butter and sugar with a mixer or by hand.
Having the pan lined with parchment paper, will help take the coconut squares from the pan easier.

Hello Bonita and Raymond and Family Happy Holidays. I'm watching your video from my new apartment. I moved on Thursday December 15 which was also my great neice Avery's 3rd Birthday. It's good to be out of the shelter even though they helped me begin a new life at almost 60. I will be 60 on January 2nd 2023. They even provided 3 big stuffed bears and 3 boxes of toys for my 3 great neices Avery and Navy and Jaylynn for Christmas. This recipe looks delicious Thank You for sharing it. Those look amazing! I accidentally hit the CC button without noticing and had the best laugh ever. Once the berries were called sir patrick berries, another time they were called parchment berries... Oh my I think you would love partridgeberries. They are a tiny, juicy and sour berry that makes tasty desserts, jams and sauces. But use whatever berry you have available and I'm sure it would be lovely. Merry Christmas to you and yours. :) Bonita

Those squares look really good. On my dad's farm in Alberta, there were ditch strawberries, and Saskatoon berry bushes. They were very good. Wild berries are amazing. I hope yoi and Raymond have a Merry Christmas. Cheers, Bonita! 👍👍✌️🇨🇦

This looks so good! I like cranberries very much, and would really like to try this. We don’t have cranberry jam in the us unless we make it ourselves, so I guess I need to get busy! Merry Christmas to you both!

Hi Murl, Thank you for your message and for stopping by, we can't get cranberry jam here in Canada only the berries. But cook them the same as you would any other berry and add sugar to make some tasty thick jam. Enjoy our NEW recipe to the fullest :) Bonita

Another great and simple recipe - thanks for sharing it. Do you think canned whole berry cranberry would work rather than jam? Or might it be too 'loose'?

Can I also ask about your mixer? In the US the overpriced Kitchen Aid is used by most older households who can finally afford such a luxury after the kids have moved out. It’s biggest feature is all the overpriced attachments to increase versatility. I myself am a huge fan of the long ago discontinued Oster Kitchen Center from the late 70’s and early 80’s, which also has a slew of attachments for versatility. So of course I see your mixer and it has similarities so I am curious about yours. Thanks Bonita! 1:05

Don't mean to but in, but have you tried the thrift stores? I tried to get my daughter to buy an older one we found at a mom & pop, out of the way thrift store but she turned it down. It was only $8 with lots of attachments. Wish now I would have just bought it myself, even know I am one of those older generations with a kitchen aid mixer, 😂. Hope you find something!

@@tonyaegan2480 I have the Oster Kitchen Center with many attachments, I have had a good portion of it from the late 80’s, and have replaced the main base a couple times since from EBay. I have some mi or fears of overworking it to make bread dough, or grind meat like I used to when my grown kids were young, but It is versatile. I would have to spend about a grand to get the pasta extruded and the meat grinder and the veggie slicer and the blender to go with the base Kitchen Aid unit to do the same things. But the base Oster units available on EBay are old and well used so I worry eventually I will not be able to keep it limping along.

Thank you so much Mary! You can substitute the coconut with crushed nuts or grated white chocolate. You can use a coconut extract for taste or leave it out. Enjoy and have a wonderful day...:) Bonita

Cranberries in N.B. grow on 10 ft bushes and have horrible pitts

Wow! That don't sound like cranberries. Usually they grow on the ground on a very low bush. The seed inside so small like in a tomato. Thank you so much for stopping by and sharing about the cranberries in NB, I hope you get to make this recipe and even use a berry you like. :) Enjoy Bonita

Did some checking and NFLD has bog cranberries, low to the ground. N.B.'s grow in large clusters. Make jelly thru a cotton cloth or a serve.
