椰糖薑汁年糕 Coconut Sugar Ginger Rice Cake ~ 一款家傳戶曉的傳統年糕 ~ 改用椰糖配方 ~ 吃得更健康 ~ 原來椰子糖 ~ 只有蔗糖三份一的升糖指數 ~ 屬於一種低升糖的健康天然糖份 ~ 最適合用來做年糕 ~ 在新年期間 ~ 就可多吃兩件了 ~ 這個配方的年糕 ~ 口感非常軟糯煙韌 ~
每啖都有着濃郁的椰香味和薑味 ~ 非常美味可口 ~ 吃過年糕 ~ 步步高升 ~
糕盤 cake pan : 20 x 15 x 5cm
材料 ingredients :
糯米粉 glutinous flour 300g
粘米粉 rice flour 75g
澄麵 wheat starch 55g
椰糖 coconut sugar 250g (小甜版)
熱水 hot water 250g
椰奶 coconut milk 300g
植物油 veg oil 50g
紅棗 red date 1 pc
水滾中大火蒸一個半鐘頭 med high heat steam for 1 1/2 hours.

磨姜茸计味道較好,切片煮較長時間出味,而且糖水蒸發較多,份量有出入,

這是個簡易版製作,有別於一般傳統的磨薑汁做法。利用煮糖水的時候加入薑片一起煮,是沒有增加時間的,所以不造成過度蒸發,而令份量有所出入。而薑味的濃度則視乎個人喜好來增加薑片,和用薑汁做的年糕都一樣咁美味的,有興趣可以試試吧!
