Coconut Sweet Bread

This Caribbean Coconut Sweet Bread is just amazing!
Ingredients
3 cups grated coconut 🥥
4 cups sifted flour
1- 1 1/2 cups sugar
4 tsp baking powder
1 tsp salt
1/2 cup melted butter or vegan butter
1 tsp cinnamon powder
1 -2 tsp nutmeg
1/2 cup chopped cherries 🍒
1/2 cup raisins and currant
1/2 cup mix peel
1 1/2 cups coconut milk or evaporate milk
1 tbsp vanilla essence
Yeild 2 loaves 8 inch
Bake at 325-350 for 45-50 minutes or until a toothpick comes out clean

I have never seen the sugar glaze added while baking. I definitely will try it. I am from the South of the US and we make a lot of sweet breads including pumpkin, sweet potato, apple, banana and cinnamon raisin. My favorite is coconut. The version I make doesn’t have the candied fruit but everything else is basically the same. I first had😢 it from a bakery in St. Thomas. When I got home I adapted my basic sweet bread recipe and added lots of coconut. Yumm!

That’s how a coconut sweet bread should be.. crumbly.. extra color is a personal preference

@@RacquelsCaribbeanCuisine I'm from Trinidad 🇹🇹, one of our all time favorite and regularly made is sweet bread. Love it sliced and toasted golden brown with butter. Can't do that if your recipe makes it a crumbling bread. Just saying 😌.
