Ingredients 材料:
40g Egg White (蛋白)
35g Caster Sugar (细砂糖)
60g Icing sugar (糖粉)
65g Almond meal (杏仁粉)
1/4 tsp coffee emulco (咖啡香精)
【Filling 馅料】
50g sugar (砂糖)
50g whipping cream (动物性鲜奶油)
1 tsp instant coffee powder (即溶咖啡粉)
120g butter(牛油)
** Separate the eggs, place the egg whites in a clean container and let them hang out in the fridge for 3 days before using. This will dehydrate them and make them perfect for macarons.
**蛋白事先分开,至少冷藏3天后使用。

Can we further reduce the sugar if don’t want so sweet . If yes ,where can we reduce ? From icing sugar or caster sugar ? And how much can we reduce ?

How many macarons can we make with this batter? Also, do we use the egg white immediately after taking out from the fridge or keep it in room temperature? Thanks Ms Katherine.
