This week, we're heading back to the whiteboard to continue our focus on roasting theories and techniques.
As a seasonally produced product, we must consider the life cycle of each green coffee when preparing to roast. In this video journal we explore the variables that we find to be the most relevant and important in their contribution to coffee quality as well, as sharing an example of our approach towards seasonal production and theoretical deviations.
We're always interested in hearing what topics you're most curious to hear us discuss, and social media is a great way of reaching out to us if you would like to make a request.

Very instructive video, much appreciated! It would be very interesting to be able to buy the same coffee in two different roasting styles from you at the same time. For example, one sample roasted to be light, balanced and transparent and another one roasted to be more intense, heavy and sweet, perhaps at the expense of complexity, while keeping the roast level or color the same. Can't wait for your next videos!

Interesting to have deeper notes as green coffee is aging...Is the moisture has dropped a bit?
