Fun apocalyptic scenario and all, but what would actually happen, assuming sperm banks weren't utilized, is the last male would be captured and trapped in an effective prison built more like a psych ward to prevent self harm. The last male would be milked like a cow, and any interaction with them would be monopolized and sold for exorbitant prices, but it's likely the government would hand out their seed at a regulated level to rebuild the population. It would be a nightmare scenario.
