Condensed Milk Dinner Rolls 煉乳小餐包｜Apron
鮮奶 fresh milk 120ml+-
即溶酵母 instant yeast 5g / 1/2Tbsp
高筋面粉 bread flour 300g / 2,1/8cup
细砂糖 sugar 10g / 1,1/2Tbsp
盐 salt 5g / 1tsp
炼乳 condensed milk 40ml
全蛋 whole egg 1(55g+- per egg)
無鹽奶油 unsalted butter 30g / 1/8cup
12杯小方模具 12cups muffin mold
摄氏180 / 华氏356 烘烤 15-17分钟
Bake at 180°C / 356°F for 15-17minutes

Made these with more condensed milk and 35g of butter, came out really good, and actually good for long tins too. Only thing I would add is to oil the pan with oil or butter before placing the dough as mine stuck even when it’s non stick. Also waited longer for the proofing time and it seems better for me not to use a cling wrap, would suggest to look at the size of the dough to gauge. The last proofing stage is crucial to wait for it to raise up to a good height. Also would suggest to use the bottom rack as my tops browned quite early or place a foil over the top after 10mins or so of baking when you think it’s brown enough already.

I made these yesterday and they turned out really good! I didn't have a square muffin pan, so I used a round one and divided the dough into three balls instead of four. The rise times took longer for me, even though I put them in a warm place. But the rolls were so good, this is my favorite roll recipe now! Thank you!

Merci pour cette recette, je viens de réaliser 12 magnifiques petites brioches, je n’avais encore jamais utilisé de lait concentré pour faire des brioches, j’ai l’habitude d’utiliser de sucre glace et du lait mais elles sont très bien. Confinement oblige, nous avons du temps pour réaliser de bonnes choses pour le plaisir des petits et grands. J’adore vous suivre, merci

I just made these rolls for breakfast. It was not sweet, but they taste like a dinner roll. They were beautiful, and the taste was good. However, they did not rise as high as they did in the video. The next time I will let them rise for 1 1/2 hours. I did not have whole milk to brush them with before baking, so I used heavy whipping cream.
