For the fief quests you can also use the middle menu point when you press „i“ So if you packed with the Jennets and you are outside in the open world it will show you the nearest fief where you can do the quest. You can also check the rewards first by clicking in there for some more information. And there is a button which will navigate you directly to the fief.

And regarding the horses to use. There are tankier ones and the ones which have higher mobility. Depends on your weapon and your playstyle you should choose your horse. A longbow player needs a mobile and fast horse. So he can turn around fast and speed fast. Someone who plays a tanky weapon should use a tanky horse so you can jump on without getting shot from your horse before you can even come closer
