I have to admit, the first dish I wanted to make after harvesting a handful of calamansi is calamansi pie. But that will be for another post. My cravings called for a savoury and classic Filipino beef stew called beef mechado.
Beef mechado is one of the easiest Filipino stews to make. It is not really that complicated. Follow the instructions in my video. List of ingredients are provided below:
- 2 kilograms of Beef Brisket (cubed)
- 4 cloves of garlic (sliced)
- Onion (sliced)
- 3 medium sized tomatoes (deseeded and sliced)
- 2 cups of tomato sauce
- 2 tablespoons of tomato paste
- 1 cup water
- Pepper to taste
- 1 tablespoon of sugar
- Sliced carrots
For the marinade:
- Half a cup of soy sauce
- A third of a cup of freshly squeezed calamansi juice (lime or lemon can substitute)
