I use about a quarter of the amount of garlic you used and I don't leave the garlic whole. I crush and chop them so the garlic flavor permeates the meat. Same for the peppercorns. I use maybe 10 and crush half of them. And I reduce the sauce more so it's thicker. Otherwise you did well for a newbie!

I was taught by friends, they recommend lemon juice over vinegar and suger was not mentioned. But this looks good. I love adobo so easy so satisfying. I recommend sprite adobo with pork belly it is my fave. There are recipes on yt but very similar but add sprite its the best sweet savory and salty i would also recommend go light on the acid :)

Although adobo differs in every Filipino household, white vinegar and soy sauce should always be there. Replacing vinegar with lemons is an overseas Filipino thing. White vinegar is used as a souring agent but it also helps preserve adobo even when left in room temp. That's what makes it special. Sugar is an optional thing. It adds flavor and helps thicken the sauce when reduced. Maybe you should try adding brown sugar next time.

@@Xhin229 It does vary, everyone has there own version. My friends had only recently immigrated but maybe that figured lemon juice would be more to my tastes. I use vinegar sometimes depends on my mood :)

Everyone and their grandma has their own version of adobo, and this one looks pretty good. Mine uses pretty much the same ingredients but i do like using half the garlic for the marinade then sautee the other half.

Ashley we are not Phillapino but my Mum always did this with Chicken Wings. Definitely marinade over night & drain & Bake wings on a Cookie sheet in oven 👍🏼😁

Just use more salt instead. Not every adobo recipe calls for soy sauce. Vinegar is the most essential ingredient. Though I’d suggest adding some other salty ingredient such as chicken powder, msg or fish sauce. Just a bit though and not the same quantity as the soy sauce in the recipe. Just enough to give the dish a deeper flavor.

You don't need to use soy sauce. You can use salt instead. My family uses salt for the salt and a teaspoon or so of soy sauce to help give the sauce a darker color. I wouldn't substitute Worcestershire sauce for the soy because it's a different flavor profile. I'm editing this because I don't want anyone substituting 1/2 cup of soy sauce with 1/2 cup salt. For the amount of chicken Ashley used, use 1/2 to 1 teaspoon of salt.
