Cooking Authentic Bánh Mì out of my Truck (Camping Meal)

In this episode, I cook up one of my favorite sandwiches I have ever tasted- the Authentic Banh Mi. I make homemade baguette and truck camp overnight at my friend's RJ and Molly's place.

Ingredients
1/4 cup Asian fish sauce
1 tablespoon honey
2 tablespoons sugar
1 teaspoon freshly ground pepper
6 scallions, white and tender green parts only, thinly sliced
2 garlic cloves, thinly sliced
1 1/2 pounds pork tenderloin, thinly sliced
Six 8-inch-long rolls or 2 baguettes, cut into 8-inch lengths and split
Hoisin sauce and Sriracha chile sauce
Vegetable oil, for grilling 1/2
seedless cucumber, cut into 2-by-1/2-inch matchsticks
1 1/2 loosely packed cups cilantro sprigs

As a viet, this is a pretty ok. Idk if the carrots aren’t pickled or not but if they aren’t pickle them next time. Also add pate (pork liver paste) and baby mayo because that’s a very key part in banh mi. I would also recommend adding pickled daikon radish and cut them like the carrots and if you can try to put the meat in a mini oven instead of a cast iron pan, it just give it a way nicer smoky taste. Also buy your bread from a Asian market

Pro tip: avoid pouring all that marinade in the cast iron cause it “boils” the meat instead of getting that crust you talked about.

That looked good! You should see if the Addicted guys can hook you up with a Fillet-Away mat for your tailgate. They work great for fish, would save your knives for regular food prep, and clean up easy. They don't stink either. And more puppy!

More starter, longer fermentation period, less water in the oven. Also allowing your bread starter to feed and age at room temperature allows for a more lively culture, less will go longer. But regardless, more starter will result in more lactic acid in the dough, making it more sour to taste, and have a much airier crumb structure. Great video!

My cast iron belonged to my grandmother and came to the us from Germany in 1900.... proves a good cast iron is worth its weight in gold.

i was about to say the same thing about how he cut meat on the tailgate of the truck,then i realized i been watching him doing cooking on his truck alot and none of them where he got sick or down with anything serious, so taking from all those videos he uploaded,and from the experience how good he is at DIY on remodeling the truck to a literal camp,i can say he can take care of himself as good as he take care of the truck. plus it shows how real it is when he said literal camp or cook from truck.
