5 eggs
350 grams of Bulgarian white cheese Sirene or any feta
1.5 cups of plain yogurt - Bulgarian
Balkan-Style or any you like 280 grams
½ teaspoon of baking soda
1 cup of butter which equals 2 sticks or 227 grams ( butter should be melted )
1 pack of Phyllo dough sheets - 454g or 16 sheets

"The cold yogurt soup (Tarator) - I normally make it in the blender. Start with a 1/2 cup in of yogurt in the blender and throw in a small garlic clove, salt and some water. Once the garlic is puréed, add the rest of the yogurt and blend for a few seconds. Add a bit of cold water or ice cubes. (Depends on the thickness of your yogurt). Throw in the roughly chopped cucumber, chopped walnuts (or sunflower seeds), 2-3 tbsp of chopped dill and a pinch of nutmeg. Pulse for 2-3 seconds just to break up the cucumbers a bit more (try not to make them into a mush). Alternatively chop the cucumbers into small pieces (or grate them) and add along with the walnuts once you’re done blending the yogurt mixture."
