I remember running into you in Cebu of 2020 (before Covid) around January or February, not sure what month. I was in Sugbo Mercado with friends and one of them got a picture with you. She noticed you amongst the crowd sitting in the middle of a busy table. It certainly is a crowded place for great food. At the time, I did not know who you were as i did not watch vlogs at the time. But looking back now, I realized it was you that I saw that night. I never met you personally as she was the one who wanted a picture quickly. Hope you're doing well. It certainly was a happier time being in Phili. I hope I can return some day when things go back to normal. 🥺

Reminder: please do not put too much salt coz you already have soy sauce on it. For that amount if chicken, use 6-7 cloves of garlic to give it a good garlicky flavor. Pepper should be sufficient. For a good adobo you should be able to taste all the spices in a happy mix! 🙂 You can bring your mom to visit the Philippines 🇵🇭 🤗 BTW, she is beautiful.

For boiling rice on the stove, when it boils. Lower your fire abs Aimee until it evaporates then when it evaporates, just lower the fire to very low for about 10 minutes until it is done Did you put a little sugar in your adobo ?

Here's my version/recipe: I use Chicken Thighs - about 6 -10 thighs and I do marinate (usually not needed) for 30 mins. Chicken + 1/4 cup soy sauce, + 1/2 cup Vinegar + 1/3 cup Sugar (or a can of seven up/sprite) + a full head of garlic (rough chopped or crushed) + dash of pepper or peppercorns + bayleaf (for aromatics) - marinade for 30 mins - heat up your pan with 2tbsp oil or olive oil, sear chicken 2 mins each side, and then add marinate + 1 cup of water and simmer covered in low to medium heat until the sauce thickens and the chicken is cooked through. Try it next time since you still have the soy sauce and vinegar =) For rice on the stove, Use a small saucepot or any size pot for that matter, 2 cups of rice, measure with your finger (yep... the only way to do it), place pot in stove, cook in high heat for 5 mins or until it starts to boil, then place heat to the lowest setting and cook for 25-28 mins on super low heat - covered. (note: DO NOT STIR) - add a tbsp of butter in the end and fluff. Enjoy! I was cringing at the sight of soy sauce pouring like wine and the cracking of what looks like a cup of salt - hehehe. Ayos dong! Salamat sa pag luto ng Adobo sa Amerika! Save the leftovers and make Adobo Fried Rice the following day using your leftover rice and the chicken adobo.

We have the same recipe hehe. Yes to lotsa garlic almost salpicao-ey. Thighs are the best but i try to skim the rendered fat as much as I can. Sometimes i would place a bunch of long green chilies (sili pang sinigang) on the top when it starts to simmer and would take it out before serving, have adobong chilies as a side dish so the adults can also customize the spiciness while the kids can enjoy with only a hint of spicy

Hi Caloy! My cooking version of adobo is: Cut the chicken drumstick into half to cook well; I don't use onions; Use about 5-6 or more cloves of garlic (lots of health benefits) for 6-8 pcs if chicken drumsticks; Just eyeball the amounts of soy sauce and vinegar depending on your taste; Throw in about 2-3 bay leaves; Throw 1/4 teaspoon of peppercorns; Mix them all together directly into the cooking pan; Set heat to medium high first wait til it starts boiling, then turn heat to medium for slow cooking until the liquid reduces and oil starting to come out; Add salt and ground pepper to taste. Enjoy the adobo! Sometimes I mix liempo (pork belly) with the chicken and it taste yummy.

Hey bud that’s a good way of cooking adobo manok but here’s a simple way and more efficient way of cooking adobong manok. Just get a sauce pan put all the ingredients in it including the chicken don’t add anymore salt because the soy sauce it already salty and just a bit of water so that your chicken can cook through medium heat and cover the sauce pan and let it simmer maybe check it every five minute till the chicken starts to sweat. When you see that, that means Ingat the chicken is cook. Ready to served!

hi there. nice to see that you are cooking adobo. a little tip, don't immediately stir any dish with vinegar when cooking or else it will have a raw vinegar taste. once put to the fire, let it boil off a little so the acidic or strong vinegar taste will evaporate . just like cooking with wine.

Kaloy when cooking rice, it is always 1:1, 1 cup rice to 1 cup water, ana ra ka sayon. Ug sa pag luto sa adobo another easy way is di na kahinanglan i marinade and manok or baboy… for 1/2 lb manok or baboy, use 1: 2/3 or 1/2 ratio for soy sauce and vinegar respectively. If aslom kaayo butangi gamay sugar. Add pud 1/4 of water (pwede pud no water)Garlic lang gamita pites na! Use the other ingredients, paminta ug bay leaf and take it easy on the asin as the soy sauce is already parat. Put it all together in the pot. Cook in medium heat till tender or till hubas na gamay ang sabaw. Enjoy!

You don’t put salt on adobo. Next time measure 1 part vinegar and 1 part soy sauce to balance the flavor.

I am so impressed Carson with how you can speak Bisaya dialect fluently. Basically it is my mom's language! I can speak tagalog but never learned bisaya. I heard my mom talk that way with my aunts, uncles, and cousins just the way you do it, LOL, strange... 🤣

@@PagkaingPinoyTV Actually it was just recent, a few years/decades that the Cebuanos/Visayas adopted the “chicken/pork adobo.” The term adobo in the 50s leading to the 80s, refers to fried pork (or chicken) with or without little sauce. That’s what I grew up with. And I asked my great grandMa about it (died in the early 90s), and that’s what she described.
