We are making filling Gyudon with lots of vegetables. The meat is so tender and the vegetables and shirataki have absorbed the savory beef broth. Delicious!
How to make Vegetable Gyudon

(2 people) Cook Time: 15 minutes
160g Beef Slices (5.6 oz)
100g Onion (3.5 oz)
100g Shirataki Noodles (3.5 oz)
30g Carrot (1.1 oz)
50g King Oyster Mushroom or substitute: shimeji, shiitake or enokitake (1.8 oz)
3 pieces of Okra
- Broth -
150ml Dashi Stock or ¼ tsp dashi stock powder, dissolved (5.3 fl oz)
2 tbsp Soy Sauce
2 tbsp Sugar
1 tbsp Sake
1 tbsp Mirin
10g Ginger Root, shredded (0.4 oz)
Beni Shoga, pickled ginger
Steamed Rice
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

If the okra is not available, try green asparagus, string bean pods or green part of long green onion. We think the green vegetables will give the dish some color, making it more visually appealing. :)

hiphop4427 I think pork would be a better substitute. The dish itself is beef specific.

I was able to find the king mushrooms, shirataki noodles and thinly sliced beef but not Okra D: I'll be using asparagus instead and trying this recipe out for dinner tonight!

+HLoneheart update; just made and nommed it. Was so good! If you can; definitely hunt down thinly sliced beef! I'm lucky and there's a small Chinese food store near me.
