This is a frozen cake with crunchy cashew meringue wafers layered with white, milk, and dark chocolates, finished with Dutch process cocoa powder. With 4 different types of chocolate, it's the more chocolatey version of the Mango Bravo Cake!

Ingredients:
Cashew Meringue Wafers:
12 large egg whites (room temperature) [360 g]
1 tsp cream of tartar [3.4 g]
3/4 cup granulated sugar [150 g]
1/2 cup powdered sugar [60 g]
1.5 cups toasted cashews [225 g]
1/4 cup cornstarch [30 g]
1 tsp vanilla extract [5 mL]
White Chocolate Cream Layers:
1 cup heavy cream, divided [240 mL]
3/4 cup (4.5 oz) white chocolate chips [127.4 g]
Milk Chocolate Cream Layer:
1/2 cup heavy cream, divided [120 mL]
1/3 cup (2 oz) milk chocolate chips [56.6 g]
1/8 tsp kosher salt [0.8 g]
2 tsp brandy (optional) [10 mL]
Dark Chocolate Shell:
1 cup (6 oz) bittersweet chocolate baking wafers (or chips) [169.8 g]
1 1/3 cups coconut oil (sub: butter) [320 mL]
Dark Chocolate Ganache:
1/2 cup heavy cream [120 mL]
4 tbsp granulated sugar [50 g]
1 1/3 cups (8 oz) bittersweet chocolate baking wafers (or chips) [226.4 g]
2 tsp brandy (optional) [10 mL]
1/4 cup warm milk (as needed) [60 mL]
Dark Chocolate Cage Wrap:
1/2 cup (3 oz) of bittersweet chocolate baking wafers (or chips) [84.9 g]
Topping:
2 tbsp Dutch process cocoa powder [11.6 g]

Perfect. This is truly a labor of love: 15 layers of crunchy cashew wafer cake with four types of chocolate. Wow! Just in time for Easter celebrations! This is indeed a great heavenly delicious cake treat for everyone while the kids run around the garden Easter egg hunting.💕👌💕

Hi Kurt, it was a successful heavenly taste chocolate obsession cake . My kids loved the crunchiness of merengue and the 4 different kinds of chocolate 🍫 that truly melts in mouth 😋💕 and they request again (my son& daughter) for their coming birthday on Oct. 8 and Oct 27🤗 so good luck to me 😂

Hello! How long is the shelf life of cashew meringue? I am thinking of making several pieces and store it in the fridge or in the freezer maybe (which one would you recommend?) I super love your videos anyway. More fruitful years to come to both of you guys :) Such an amazing couple!

Hello - if you're making the cashew meringue ahead of time, I'd suggest storing it in the freezer - should keep for 1 month in the freezer. Storing it in the fridge will make it soggy. Hope this helps! :)

We got our 8" rings online on Amazon. You can also use the sides of a spring-form pan. Hope this helps! :)

Hello. The long baking time (6 hrs) and low temperature (225 F) is necessary to make thick crunchy meringue wafers without burning the outer layers. Hope this helps! :)
