INGREDIENTS
Brinjal / Egg plant - 500 gram
peanuts - 4 tablespoon / 70 gram
sesame seeds - 5 tablespoon / 60 gram
coconut powder - 6 tablespoon / 50 gram
cumin seeds - 1 teaspoon
coriander seeds - 2 teaspoon
poppy seeds - 2 tablespoon / 30 gram
fried onion - 1 / 80 gram
coriander leaves - handful
green chillies - 4
Tamarind - 60
oil - 1/2 cup
cumin seeds - 1 teaspoon
mustard seeds - 1 teaspoon
fenugreek seeds - 1/4 teaspoon
kaalonji - 1/4 teaspoon / black cumin
curry leaves
green chillies - 5
tomatoes
turmeric powder - 1 teaspoon
red chilli powder - 1 teaspoon
salt as required
coriander leaves

Good recipe. But made a slight change for coconut powder i mixed fresh coconut scraped and fried. It was delicious n yammy. Since it is easyly available in my garden i made a change. Thnx for sharing this recipe. Regards Satish

Didi this is very tasty, thank you for sharing. So as I see it you don't use finely chopped onion as part of the stuffing like we do in North Karnataka, also we use freshly grated raw coconut. Must try this out.

Mostly people make a mistake of frying brinjal first and take it out. Then fry the paste. I always thought that the process was a big mistake as i know sometimes brinjal opens and everything falls apart. I never liked it. Your procedure is best. Coming from Hyderabad, I always made my recipes carefully. But in this the slight change is you have added tamarind pulp step by step which is excellent way of introducing sourness in food. Its a well established method for masala baingan.

Great receipe. I add some roasted maithi to the masala. Enhanced the flavour. Please note that the transcript does not mention ginger and garlic paste. There is also no mention of garlic. cloves.
