Tonight I made a copycat version of Cracker Barrel restaurant meatloaf that I first saw on Tess Cooks 4u channel. • Copycat CRACKER BARREL... This meatloaf recipe was so good and surpassed my expectations. There was leftovers since it was just my husband that eat it. He is working night shift this week so he can take some to eat at work tomorrow. I have made this at least 4 times before. The meatloaf was full of flavor, moist and had a great texture. I plan on making Rosemary & Garlic Chicken Thighs next. Stay tuned for that video recipe! Enjoy.
INGREDIENTS:
2 pounds lean ground beef
1 small finely diced onion
1/2 cup or 1 finely diced bell pepper - optional
1 1/2 or 2 sleeves of crushed Ritz crackers
3 eggs
4 oz. shredded sharp cheddar or Colby cheese
1/2 cup milk
1 tsp. salt
1/4 tsp. black pepper
Topping:
1/2 to 3/4 cup ketchup
2 tbsp. brown sugar
1 tsp. mustard
*Mix above ingredients well
Sides:
mash potatoes
corn
Preheat oven 350 degrees F
In a large bowl mix the eggs, cracker crumbs, onion, bell pepper, cheese, milk, salt and black pepper.

Add ground beef and mix well just to combine - don't over mix.
Place meatloaf on foil or parchment paper lined baking sheet / pan.
Form into loaf.
Bake at 350 degrees F for 30 minutes. Remove from oven and spread and brush on topping. Bake for an additional 30-40 minutes or until the center is 160 degrees F.
Remove from oven and let stand for 15 minutes before slicing and serving.
