Also cut your flour that you put chicken in to make it crispy with potato starch. 4 to 1 ratio. (Flour to potato starch)It will make you fried chicken so much crispier!

In korea they only use potato starch and zero flour. Gets even crispier but you need to dunk it into marinade after coating

There are more starches than that even in my local Asian Market! Lotus Root, Water Chestnut, Cassava (in quantity)... mung bean... rice, glutinous rice, wheat..., plus they come already blended to make specific dishes. And most of them have also been made into noodles! I think this is a kind of genius. In America we have corn starch and a few kinds of wheat flour for the most part. I often wonder what people are doing with Tapioca starch, which is sold everywhere. I have seen it made into transparent dumplings, which were pretty amazing.

I'm very glad about my laziness. I always assumed both had the same effect when used as a thickener, but I opted to JUST have potato starch in my oantry mainly because I prefer it when it comes to frying, the texture is IMO superior to cornstarch (I understand you're supposed to have a certain ratio when for dry mix when frying, but idgaf).

I used cornstarch one time to make gravy. It works. But the left over gravy thinned out a lot after cooling down.

This is not true, different starch works well with so many different dishes. Some dressing or sauce may required corn instead of potatoes.

my great uncle is from china and owned a popular chinese restaurant for 18 years before he sold it, an actual quality chinese restaurant not one of those americanized take-out places. he used and still uses corn starch in his sauces.
