I felt the exact same about Jacob. A character that started off bad, in a bad situation, but worked so damn hard to improve himself and he ended up in a nice relationship with a nice girl. Then the writers had to go and change him back and yet ruin the happy and improved relationship with him and Amy. The cheating is not really the main issue here. Aaron had sex with Amy when she was unconscious. Amy couldn't consent to what happened to her, as she was unable to say whether she wanted it or not. He literally raped her.

Alcohol just lowers inhibitions, it doesn’t change your character. So, he either had a very bad understanding of consent or very low empathy for her. Any decent man wouldn’t do that no matter how drunk - it’s normal to care about the person your attracted to, not just their body.
