Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I just got my new smoker a couple weeks ago and I’m so happy to be spreading BBQ love. It’s so unique and everyone has their own flow and steez. Every time I see hate on a BBQ video I always say “don’t hate, load your plate and appreciate.”

Cheers Greg! Happy Sunday. Yes Sam's has good meats so I use their meats for my classes in addition to RDepot and Costco. I especially like the certified Angus Choice at Sam's as it's good eating.

Haha. I'm Hispanic just like that butcher, and we usually cook our brisket in a crock pot and shred it for burritos and tacos. So you usually don't want alot of fat since the crock pot retains alot of moisture anyway. So he was saying the leaner one was beautiful lol.

Thanks to all of your good advice I smoked my 1st brisket and it was a complete success. Everyone raved about how good my brisket tasted. I smoked it then wrapped and finished it in the oven. Don't trust the oven controls, I used my wireless probes in the oven also.I had a lot of confidence in what I was doing due the number of your videos I watched.

I buy from Costco so it's nice to see their brisket isn't bad. I retired 1 1/2 years ago and live in Connecticut. I'm looking to relocate in 12 months to save on taxes and spend more time outdoors. Got room for another Buddy ….. LOL. Great Job!

It's worth noting different regions in the country have different beef suppliers...Both Sam's Club and Costco do not use just one supplier or single distribution center for the whole country. The meat you get can really just depend on what state you are in and the particular day you happen to be shopping. Either one could have a better offering on any given day.

I'm glad I'm not the only one who prefers to finish off the brisket in the oven. After poking the fire all night long, it's nice to be able to set it and forget it in the oven, that way I can get some sleep. lol

Harry, I have another idea for you. I would like a video on how to pick the woods and show what the different types look like (how to pick them). What type of woods to use for what type of cooks. I am very curious how the wood affects the cook/flavor etc. Also how to pick cords of wood (what to look for) etc

Hi Harry, First off, thank you soo much for all you do. The info you give is amazing to a aspiring comp cook like me. Like you, I will be using WSMs in competitions for much of the same reason you and others do. Wondering if you had any info on how to cook your 4 meats for comps in two 22 WSMs, or one 22 and one 18? Trying to figure how timing and how to organize the meat in the pits for the turn ins etc. Thank you again and looking forward to the new video!!

The next challenge would be to compare two prime briskets - WSM vs. traditional offset. The airflow through the WSM is going to be a lot less (even with the lid propped open a bit) than the offset, cooking in traditional Texas fashion. It would be an interesting comparison! So if you're ever up for a trip to SW Missouri, we could arrange that test and a bonus BBQ crawl in Kansas City! :-D

Very good video!! I haven’t tried Costco’s brisket yet, but may need to give it a try. I have tried the Certified Angus and the prime briskets from Sam’s and were very pleased with both. Thanks again for sharing this video!!

My HEB now stock Wagyu brisket on a regular basis as well as Wagyu chuck roast. The Wagyu chuck roast almost make me want to give up smoking brisket it's so good.

Great video Harry. Both looked amazing! I've used Sam's briskets before, Costco is about 25mi away so I'm rarely there. I usually get IBP Angus Choice from Kroger's. I'm looking forward to having some SRF Wagyu Black very soon though.

The Sam's by my house almost always has prime grade. I would say that Costco generally has better meat but I think there's more Sam's Clubs than Costcos available for us more rural folk.

Slice and place in foil pan and cover with defatted jus to keep it moist. Cover tightly w foil and freeze or refrigerate

I've had nothing but great results with Costco prime. Last 5 years my WSM has been in the shed, seems crazy now the money spent on an offset could have bought a lot more brisket... if I had more talent. Thanks for the great video.

Harry, I watch your videos all the time, keep up the good work. I am new(wish) to smoking and currently use a SnS with my kettle. I have been hesitant to do brisket because, I don't want to stay up all night and wth really long cooks I have had issues with adding more fuel. You are the best Harry Soo. If I don't cook FPL or SRF I use Sams. The closet Cosco is 50 miles so it's Sams. I think Sams haS the better Briskets than Walmart because Sams usually has 20 to choose from where our local WM at best may have 4.

As always thanks for this video. I liked the rub you made for this video. Nice and simple. I was happy and a bit surprised to see both those briskets fit on one grill in the 22"WSM. That's the second time I have seen you use the WSM with splits, I'm definitely going to try that method out. Fyi, I'm so far disappointed with Amazon on my order of you're rubs. They used UPS and so far they have not delivered. I'll try latter today to find out what the problem is. It was supposed to be here last Wednesday. Anyway keep up you're great work, it's always appreciated. 😃👍

@@SlapYoDaddyBBQ thanks Harry. Today I found out what the problem was. First I made the mistake of thinking it was UPS. Nope it was USPS, easy mistake. Turns out the local post office to dog needs to have a chat with one of her rout drivers. I'll be doing a follow up next week so this never happens again. There's just way to much drama to go into it any further. So the good news is I did get the remaining containers. I'll be set for awhile. Thank you for your reply. Last thing and I almost don't want to ask but I kinda have to. So I'm sure you have seen Justin's vids on webber's pellet cooker. Damm just so sad. So are you checking it out still , very curious what you think about this either way. 😃

Pro tip: get a vacuum sealer to store your portioned out leftovers. Keeps meet longer and take up much less space in the fridge....side note , So Beans is having sleepovers? lol, that dog has more fun than me and definitely eats better 🐕

Love all of your videos Harry. Do you prefer foil over butcher paper, or is there a certain style of cook (competition or backyard) that warrants using paper over foil?

If you use 10 oz mop, best to foil as butcher paper is not waterproof until the grease soaks into the paper

When you are trimming on the fat cap side do you recommend removing a thin layer of the hard leathery fat from the flat or do you leave it alone for maximum protection of the meat?

Walmart Select Brisket here in the Texas Hill Country was $2.28 a lb. yesterday. That's the most expensive brisket I've ever bought in the last 50 years. Up until the Pandemic started they were under $2 a lb. No I'm not looking to win a contest , I'm looking to eat good brisket and feed my family. When I first got married Briskets were 17 cents a lb. Lightly trim, Salt and Pepper rub, 12 hours or so in Box smoker. 250F . Cook till Tender about 195-200f. Wrap in Paper only if I'm in a hurry and running a bit late. If I'm going to spend 10 bucks a lb for meat We're going out to eat at J&J's or Smokey Moe's. The whole trick to good brisket is the Cook. If you move to Austin and open a BBQ joint in a trailer you'd have to fight Texans off with a stick even if you used Selects and served Lone Star beer. ;-)
