Cookie Dough) Cottage Cheese ice cream is another cottage cheese recipe. Perfect for a sweet snack or dessert. Free of refined sugars and full of protein. Cottage cheese is super versatile!
The recipe included making cookie dough bites, but I left them out as I found it perfect as just the ice cream.If you make them, you can add some to the ice cream and also save some to top it with when it is frozen. Alternatively, just add the cookie dough bites as a topping.
Use a good quality cottage cheese for best results.

* 3 cups cottage cheese
* 1/3 cup maple syrup
* 1 tsp vanilla
* 2 tbsp oat flour
* 1/4 cup dark choc cut into chunks
* 2 tbsp almond butter
Blend cottage cheese, maple syrup, vanilla, oat flour and almond butter until creamy and smooth.
Add through the chocolate chunks and mix.
Pour into container and freeze until hardened about 4-6 hours.
Thaw ice cream about 15 mins before eating.
Cookie Dough Bites
* 1/4 cup almond flour
* 1/4 cup vanilla protein powder
* 1/4 teaspoon salt
* 1/4 cup maple syrup
* 1/2 cup creamy almond butter
* 1/2 teaspoon vanilla
* 1/4 cup mini chocolate chips
Mix all together, roll into balls.
