It is a joy to see you are passionate in cooking.... here is my version of Aglio Olio Recipe for 2 pax, hope to see u are able to redo it... 4-5 of Garlic Cloves 1 big Chilli (less hot), or 2 small chilli (more hot) 5 tablespoon of olive oil 1.5 teaspoons of salt 1/10 teaspoon of Italian herbs or mixed herbs. Suggest pairing: bacon, sausage, and (or) eggs. Step 1: Boil a 3/4 pot of water first, then open up a pack spaghetti (cook slower) or angel hair(cook faster), use 1/3 to 1/2 pack of the noodles (depend on your appetite). Once the water is boiled, put 1 tablespoon of olive oil and 1 teaspoon of salt. (Remember to read the instruction behind the packaging of the noodles, because they will state the best cooking time for the noodles, so it won't overcook or undercooked, I would also suggest once it reach the cooking time, taste 1 noodle and see if it is cook to the texture u like or want). Step 2: take off the cover of the garlic cloves and chop them. Step 3: Cut the top part of the chilli crown, face the cut part down and rub the chilli with your 2 fingers tip, and the seeds will come out. Slice them in 45 degree. Step 4 (Optional): Prepare a pot of cold water, let your noodles to rest in it, so it won't stick together when it is dried up and it could give a better QQ texture too (personally feel that). Step 5: put 4 tablespoons of olive oil on the pan, once it is heated up, put the chopped Garlic, sliced chilli with half (with bacon) to 1 teaspoon (without bacon) of salt (you may add the portions of bacon can be sliced or in small piece form) stir-fried until the garlic turn golden or the bacon go golden-brown... Step 6(i): (Optional) take the Step 5 ingredient out from the pan and put it aside. with the same oil u may saute the sausage (with the same oil mix with the noodle later), or put the step 5 oil and ingredients out from the pan and put it into a bowl, then add some oil for fried sunny eggs. Step 6(ii): Dried up the noodles, and put it into the pan for a quick stir... (Key is the oil must be hot, and before the seasoning turn black and burnt.) Step 7: Put the Italian or mixed herbs in and have a quick stir with the noodle, and do plating. Aglio Olio... Done.

I find Catherine’s cooking to be more of a prank than proper meal. 101% for effort though. Commendable spirit and unrelenting perseverance. Jym’s reaction and comments quite savage and direct. But can tell, he’s trying hard to be nice and encouraging.
