Cast iron works the best! The idea is that it is dissipating the cold quicker than just setting the meat out by itself. I learned it from a restaurant chef. They have some fantastic tips!

The end of March is a meaningful time for me too in Japan. I was there at that time right after the terrible tsunami and earthquake of 2011 as my daughter was living in Japan then.
