Here's why: First of all in order to shape metal you need it to be hot, and dumping cold water on a hot piece of metal without going through the right procedures is only going to compromise the integrity of the metal because of temperature shock. (Much in the same way hot lava cools down to crystallize and form brittle complex structures like obsidian) Incorrectly tempering metal like he is doing will only result in a brittle mess filled with micro fractures and cracks that will instantly shatter as soon as they go under a little bit of stress. He's not quenching the metal, he's ruining it. And even if it did somehow produce something workable he's literally wasting his time by constantly having to reheat the metal he just dumped water on by shoving it back in the forge and waiting until it gets to a workable temperature. Not only that but his wimpy little human arms aren't going to do anything to the metal compared to an ordinary steel hammer he can swing or an industrial power hammer. Humans as a whole use specialized tools for a reason and don't just wail on things like cavemen the way he is doing. We use tools to perform complicated tasks that can't be done with our bare hands. How can he bevel, bend, twist, grind or punch a hole through the metal he's working on with his fleshy hands? Smashing your soft squishy fist against a hot piece of metal isn't going to do anything to it and you'd be much better off using hammer. Metals are difficult materials to work with no matter how hot they are. It takes a lot of force and energy (i.e. percussive coercion) to shape metal the way you want it to, and that's why craftsmen have created hundreds of different styles of hammers, each with their own different purposes and uses. Either this dude's a charlatan or he's ignorant and doesn't know what he's doing. People have been blacksmithing the way they have been for years because that's how the process works. Banging his wet hands on a hot piece of metal isn't an innovation, it's an evolutionary step backwards as even monkeys know to hit rocks with other rocks instead of using their hands. Do I even need to point out how stupid it is to touch a hot piece of metal with your bare hands? Blacksmiths and welders wear heat resistant gloves for a reason and all it would take would be one minor slip up to cause severe bodily harm to yourself. Ultimately his gimmick is simply that, a gimmick. It's dumb and inefficient to use your damp hand like a hammer because it introduces all sorts of problems both in safety and quality of the material you're working on. No blacksmith worth his salt would think this is a credible professional. He's a fool doing it for the attention.
