Fermented veggies is the KEY to healthy intestinal behavior. Many, if not most of us, have imbalanced bacteria in our bowels, and that why many people spend much more time in the bathroom than they should, or have to RUN to the bathroom all of a sudden. It's a sensitive subject, but one that we all know. Fermented veggies will cure this. It has for many that I know, and it will for you too. It only takes a few hours for it to work, so try it, and correct me if I'm wrong.

Craig, this is one of the better sauerkraut "how to make" videos. You are correct when you say that the juice needs to come out from the cabbage, it needs crushing. I recommend ALL my patients with Candida, SIBO, leaky gut, etc - to embrace sauerkraut, it ranks among one of the best of all fermented foods. This super food builds very healthy levels of bifidobacterium especially - and improves the health of the large intestine significantly.

here's a few things for lessening bad digestion eat a high-fiber diet eat insoluble and soluble fiber Limit foods that are high in fat Add probiotics into your diet Try to eat on schedule ie the same time each day Keep hydrated by drinking plenty of water Stop habits such as smoking and drinking excessive caffeine and alcohol. Exercise often to help keep food moving through the digestive system, Limit Too much stress or anxiety can cause the digestive system to go wrong. (I learned these and the reasons they work from Marita Bio Pro website )

I will be making this for my family as well as my dog. I am hoping to replace his current probiotics from Mercola since they are quite pricey. Any insight you may have on this (or anyone else) would be much appreciated! GREAT video Craig. THANKS!

If you don't have enough brine for a full jar can you add tap water or would it have to be boiled ? I seem to have had a bit of rot or mold at the top. Have been afraid to eat it!

I'm eating my first home-fermented sauerkraut tonight at age 64. Have always loved it, never knew how easy it was to make, until Craig's video. I used a cheap little OXO mandolin from Target which worked great (no jokes about having skin in the game:-) THANKS BROTHER!

Thank you! This is exactly how my mom used to make sauerkraut, with huge cabbages from our garden! But she had a huge crock on our back deck and would out an inverted plate with a huge rock on it, to keep the cabbage under the brine, and then a wooden lid on the crock. I can't wait to make this, the country I live in now has no form of sauerkraut to purchase.

Great video Craig! Just made my first batch today. I know you're the man but if I can share a tip I came up with today.....I cut a circle of cabbage leaf using the jar lid as a template and this made a perfect plug for the jar to keep the cabbage below the brine👍

oh wow, this is exactly the video I needed. I didn't have a crock and kept putting off getting one. I love kraut and barely remember my grandmother making it so this is doable with what I already have. blessings from North Carolina USA and 1 kilogram is 2.2 lbs

For very large batches, I use the old crock part from a slow cooker. The ceramic ones.Go to goodwill or thrift store and find a cheap slow cooker. Use the ceramic part. Always rinse with boiling water for cleanliness. Use a plate to cover the cabbage and a container full of water for the weight. Old shirt/towel/sheet on top and rubber band around lip of crock. Put in basement and forget about it for awhile. Check every week or so to skim off the scum on top. Perfectly o.k. as long as the cabbage is BELOW the brine. An elderly lady at work assured me it would be fine, so I brought some in for her to "sample". She didn't drop dead, so I knew it was fine... LOLMy mother learned from her father to put a slice or two of apple in the middle and it will add flavor. He was Russian/German....

Tried 2 methods today. I can already tell yours will be the best. It already looks like sourkraut. Can't believe a whole head of cabbage fit it a quart jar!

Thank you for this wonderful lesson. I made sauerkraut a couple years back, and then canned it. Not thinking or knowing I could safely keep in the fridge. During the fermentation some of my jars exploded, because nobody in other videos hardly talk about the pressure and such that builds up. My peepaw sent 2 fresh picked cabbage with my momma to give me, and I shredded em both and now have 2 beautiful jars in a cabinet waiting to be ready, following your video. I used Icelandic seasalt from our hiking trip. I used cabbage leaves to press down the shreds beneath the cabbage brine, put some plastic wrap on too of the brine, topped that with extra leftover cabbage brine, then covered with more plastic wrap, pressing around the edges of the jar. I have them setting on a towel to catch leakage.

Love the tip about enhancing the brine seal by putting left over cabbage leaf over final product and then holding down with the cabbage core

has the brine still got to cover the sauerkraut when fermenting is done and is put in fridge? and if you use the cabbage core holding down method would this become bad? thanks

I learned on my own, I get the 20 qt, glass bowl from the infrared oven I have, sprinkle the salt, and mix it evenly. I use 20 grams per kg. Let it sit for 30 minutes, then crush and put in mason jars. I let it ferment for up to 10 months. The secret is to wait 30 minutes before crushing and squish the cabbage.

Excellent video, Craig. Thanks so much...made my first batch a few weeks ago. It was so delicious raw and eventually cooked for a traditional German dish. My grandmother used to make this in large tubs but I never had the opportunity to learn from her. Thanks again from a German living in Spain now!

As I grew up in Wisconsin I didn't like sauerkraut. Then, as an adult this past year I tried it here in Germany as its a traditional dish and there is one helluva difference in taste. Thanks for making the video, I want to give this a try real soon.

Great video Craig! You inspired me to make my first ever batch of kraut a week ago today and it is already really good! Way better than any I have ever purchased in a store, fresh or canned. You also taught me that I had been throwing away the best part of the cabbage for years, that center part of the stem (core) really is the best. Keep up the great work, and thanks for all you do! 17!

I believe it aluminum you want to stay away from. I use a very large stainless bowl and it works just fine. The aluminum is reactive to acids and salts.

Thanks to you, I have made Sauerkraut 3 times now and it is DELICIOUS. I just watched the video and noticed you used a mandolin and a potato masher which is a great idea. Thanks for making the process so accessible. I think I originally watched an earlier video or just missed those two point. But the potato masher will help get the extra juice out which was needed in the past 3 batches.

Ok followed your diy and made my own and I have to tell you that a few days in to brewing it I was skeptical but at the end of 10 days and putting it in the fridge the first time I tasted it WOW it was the bomb , I keep coming back to the fridge to get more while drinking a home brew. Was absolutely Delicious. Thank you for doing this vid and making my life a little better.

Craig. I put a 1/4 inch layer of extra virgin olive oil on top of the brine. I use the olive oil in place of the cabbage leaf and stem. The oil does a good job of forming an air barrier. Each day, I pack down the cabbage with a fork to get all the CO2 bubbles out and ensure that the cabbage is below the olive oil. My kraut is ready in about 3 to 4 days.

Grew up Mennonite and my mother used to make it in a big crock in layers and at the end put large cabbage leaves on top with a plate on top of that. When we needed it we simply took a pot into the fruit cellar and spooned some out. It would keep in cellar all winter.

This was so fun to watch. Good to know I'm not the only one making a huge mess! I used to only use a crock, but now I'm doing large glass jars when I'm not in the mood for a big project. I always use stainless bowls, so I think that's fine as long as it's really stainless.

Thanks for spreading the word about sauerkraut! It's been more than 50 yrs, but I remember my grandma making sauerkraut in a large crock in the cellar. The kraut was kept submerged with an inverted platter, weighed down by a big rock. We ate it uncooked and on occasion fried with onions and Polish or German sausage.

@@BetoElViejo Thank you, I can't wait! I literally just finished my first test batches today and then saw your comment. I got 5 small to medium jars going. 3 are a variation of cabbage, shredded carrots, some red onion, and bits of apple and ginger. One is mostly shredded carrots and another is mostly red onion. I just wanted to use up all of the produce that I bought for this project earlier in the week, so it turned into a big mix and match effort. 😊 Took me about 4-5 hours (was also doing other things in the kitchen) with 1 medium-large head of cabbage, 1/2 medium-large red onion, 1/2 large apple, a 10 oz. bag of shredded carrots, and a 2"x3" piece of ginger. I got organic as available. Listing here so any other newbies have a point of reference and don't overbuy for a small test launch. Got a 10 oz jar, 2 12-oz, and 2 16-oz jars filled. I also did the sprinkling and mixing of salt into the cut up cabbage and leaving it sit for 30-45 minutes before doing the hand crushing. I didn't have glass or any other kind of stand-in weights to keep the vegetables submerged so I took an idea from someone else's comment somewhere and filled a non-zip sandwich bag with a little bit of water to put btw the lid and the liquid/vegs. I squeezed out the air but left a little room for the water to move around (and not pop open), twisted the extra into a tail and tied 2 successive knots on the tail of the sandwich bag. I'm beat now but glad to get it all done and see what turns out. 🤞

I am Austrian. Sauerkraut was invented as a Vitamin C source during the winter time, when there where not much other sources ( back in the times).

It is great to see you making home brewed sauerkraut. I love the stuff. I use an old 2gal. fermenting bucket with some Polish crock weights to keep the stuff below the water line. If you haven't already, give red cabbage a try(I usually go half red/half green). It's like vegetable candy: sauer, sweet, salty, crunchy yummy... also, the red pigment acts as a pH indicator.

growing up in Berlin my grand mother went to the local grocer and got sauerkraut out of a barrel but this had juniper berries mixed throughout and had an incredible flavor i have not tasted since

Another great video Craig! The slicer thingy you keep referring to is called a Mandolin Slicer. I too use mine for Kraut. I also use a 3 gallon bucket for mixing all at the same time. Looking forward to your next video!

I kept the mason jar lid on loose, but it oxidized the saurkraut and made it beige color. I tightened the lid and had better results, but had to burp the lid once a day for a week. Tastes great and hardly had any bad gas, LOL! Thanks Craig for posting this interesting video!

FYI the saurkraut does go beige anyway, but if you had better results with the burping method, then do what works. It's just that if you forget to burp it, there could be problems. :)

We used to make 70 or 80 quarts every year when my dad was living. I agree that home-made is the best tasting! And you can't beat it for what it does for your gut. This was a great video, step by step instructions - sure to help anyone who is doing this for the first time! Dad made beer too, but he didn't have a set-up like yours!
