Cranberry Bread with Orange Glaze

Күн бұрынOrange-glazed Cranberry bread is loaded with juicy cranberries with a moist and tender crumb. This stays moist for a few days after it’s made so it’s perfect as a homemade Christmas gift.

CRANBERRY BREAD INGREDIENTS:
►1 1/2 cups all-purpose flour
►1 tsp baking powder
►1/4 tsp salt
►1/4 cup milk, room temperature
►Zest of 1 large orange, divided
►1/4 cup orange juice, freshly squeezed
►6 Tbsp unsalted butter, softened
►3/4 cup granulated sugar
►2 large eggs, room temperature
►1 1/2 cups fresh cranberries
►1/2 Tbsp flour
ORANGE GLAZE INGREDIENTS:
►1 cup powdered sugar
►1 1/2 Tbsp freshly squeezed orange juice
►1 tsp orange zest, reserved from the orange above

I love that you use a hand mixer for most of your recipes vs. using a stand mixer (that I don't have). It makes everything seem more approachable!

I have been a baker for 29 years and I prefer my hand beaters to my stand mixer most of the time. It's just easier clean up!

I have both but I don't have the bench space for the stand mixer and can't be bothered taking it out. I love my hand mixer too😊

You guys are correct! I have both and unless it’s something that needs time whipping or kneading I absolutely prefer to use my hand beaters. The KA is heavy and more work to clean!

Made this during a snowy/cold Saturday. My first baking attempt in my life (57). It turned out sooo good. Luckily I made 2 and took the second to a meeting and was called aside many times with folks wanting the recipe. Hats off to you Natasha. This made a Monday morning meeting ….yummy 😋

This is just like the cranberry orange bunch cake! I made that cake for Thanksgiving and it was awesome to be able to make it for my loved ones! Looking forward to this variation!

I stumbled on this recipe while searching the internet for a tasty recipe for cranberry orange bread, and you did not disappoint. This bread has the right balance between cranberry and orange, not overly sweet, moist, and packed with flavor. I opted just to dust with confectioner sugar v. glazing. DELICIOUS!

I just made this and it is sooo delicious!! I love that it doesn't have a lot of butter in it, and no oil (I don't like greasy cakes). It feels light and fluffy and actually not too sweet, so definitely listen to Natasha and add the glaze! Staple recipe for sure. Only piece of the cake is left btw haha

😊I made this today with two changes. Gluten free and baked in a bundt pan. It is delicious!! The flour I always use for all of my baking is gluten free Namaste all purpose flour.

2/3 cup, soaked for 10 mins in hot water. Reduce sugar to 2/3 cup as dried cranberries are sweeter. I made this cake and it was delicious!

This bread is awesome! I made it today and could barely wait for it to cool before tasting it! 😋 I didn’t have fresh cranberries so I used the dried ones (craisins). I presoaked them in some hot water for about 15 minutes to add moisture and although the tanginess wasn’t quite obvious, the overall taste was really delicious and the texture was soft and fluffy. @@nalleliespinoza5920 hello, I did with both, cranberry and blueberry with orange, I prefer with blueberry one, I find cranberry's sharp taste was overwhelming in the bread. So blueberry is defo for me. And maybe I will use yogurt too in the future, just need to know the right measurement😁😁All the best

For health watchers who’d make a healthier version but cannot glaze the cake I recommend you brush it with diluted fruit jam with hot water or leave the cake in pan, poke it with a toothpick all over, sparingly then pour orange juice and let sit for about a half hour before transferring it to your serving plate. If opting for a sweeter top, drizzle with honey and shake ground coconut over it until it’s covered. 🖐🏻😀 Enjoy food guilt free.
