How to cook vegetables could make a great difference in their culinary experience based on their textures and flavors. One of the best way to cook vegetables is stir-frying in the wok, but the vegetables could turn out very differently, depending on the cooking techniques. One of the most important aspects of these techniques is to achieve wok hei, which is a term to describe the characteristics of the dish when it is perfectly executed. Wok hei is generally believed to be only achievable in woks over high heat capacity stoves. However, I have learned that it is not always the case, and with proper compensations, it is possible to achieve wok hei in woks cooked over home kitchen stoves with conventional heat capacity. This dish is another demonstration of how to achieve wok hei with broccoli and purple cabbage to create delightful flavor and texture.

Tak, your techniques are so helpful. I have been using a wok to cook meals every day for seven months, and my grandchildren are becoming vegetable lovers! My own health has improved, too!

I truly believe that helping children to eat a healthy diet is the greatest gift that they will benefit from for their entire life. I am also very please to hear that you health has improved as well. Would it be better to add the oil around the top of the wok and let it run down into the center so that heats up prior to hitting the broccoli? One thing I have been told is that foods absorb cool oil, but hot oil immediately seals and cooks the outside of the food (the principal behind deep frying). The other advantage of adding oil around the top of the wok is that the cool oil will not cool the lower wok surface as much. Another thing I'm wondering is if it makes sense to do a combination of steaming and frying? I would need to experiment, but I'm thinking of doing a "stir steam" for a short time, then remove the broccoli and add some oil, and after it heats stir fry the broccoli to get the desired finish. I'm betting I would prefer your method, but then again reducing the oil and calories would be a good thing :) Great videos!

You are most welcome. I am in the process of organizing all the vegetarian dishes into a playlist for those who do not consume meat. My wife and I are 95% vegetarian. She loves salmon and I love shrimp!
