Almond chicken is common in some Chinese restaurants here in the states but it's not all the same and slightly different from one restaurant to another.

now the version I grew up in mid fifties was a stir fry with light brown gravy with chicken and mushroom slices with diced celery, water chestnuts, and green onion.. mix with either almond slices or cashew nuts. Up until the 70 's it was somewhat American Cantonese based Chinese. Now after that it became more Mandarin based.

That looks good sort of reminds me of Springfield Style Cashew chicken a dish that was developed in Missouri in the early 60’s by David Leong. It is the iconic dish of Springfield Missouri.

Ooh, Flo definitely needs to research Springfield style Cashew Chicken for a video! I’m unfortunately allergic to gluten and can’t get it anymore when I’m there, but it is indeed a tradition.

I don't have an air fryer but I love your recipes so I bake them in a toaster oven by using a perforated pan or rack allowing air to circulate around the food for even crisping, Has always worked me so I'm going to try this one as well in the next few days after I purchase some items. Almond chicken is whole breast meat or thigh that is battered and deep fried, after cooking it you slice the pieces and sprinkle crushed almond bits on top of the chicken and serve with fresh lemon.

From my understanding this is a dish that originated in Canada. Soo Gai is what it was called. I am lucky enough that I live in a northern western state and grew up eating this dish called almond chicken. Also called Detroit Almond chicken and ABC (almond boneless chicken). In the late 80,s I lived in upper New York and was only able to find it in two Asian restaurants there at that time. Thank you so much for covering this and showing that it can be done in the air fryer! I am going to make some this week!

Thanks for this one, guys! I was one of those who requested it. I laugh now to think how I never realized that the food like this I loved eating when I was growing up wasn’t even ‘real’ Chinese food. Same-same: what do you mean Taco Bell isn’t real Mexican food? 😂😂😂😂. Regardless, I still love it so much. I, too, have graduated to fresh mushrooms. (After I got my drivers license, I would go to The Monsoon restaurant all alone for pork fried rice, egg fu young, or boneless almond chicken. 16 years old! Usually I’d just order one of them and leave with my leftovers in the little white takeout box. Oh happy independence!) All that’s left on my Chinese food make-it-myself bucket list would be the beloved and requisite FORTUNE COOKIE!! I dare you, Flo!! 🤎XOjennyinseattle

I worked in a wonderful detroit area Chinese restaurant in the 70s. Probably watched it made a thousand times. Never had mushrooms in it. Just almonds and sliced scallions s as a garnish.

I really enjoy your cooking methods. Making almond chicken without ever having it is awesome and sounds like something I would do. I have enjoyed making some of your recipes from your cookbook. So far garlic noodles seems to be my favorite. But followed closely by General Tso's chicken and pepper steak. Guess my tastes run like Dudes. Thank you for sharing and inspiring.

Flo and Dude: Have you guys watched “Soul of a Banquet” about Cecilia Chiang? She is the “Mother of American Chinese Food” (I think it’s her son who started P.F. Chang restaurants). Cecilia died last October at age 100! There are numerous KZfaq videos about her, but the documentary is great. It still has to be paid for (I did not check the streaming services like Netflix or Hulu, etc. in case it’s there) but it would be a fun family movie night experience. We can credit (or blame?😂) her for the likes of egg fu young and boneless almond chicken. Actually, also for opening cultures to each of us here in the US. ~xoj

Please! NO! Cecilia Chang is credited with introducing authentic Northern style Chinese cuisine to the US! She was appalled at the Westernized Chinese (Cantonese) food served in the San Francisco Chinatown restaurants. please re-watch Soul of a Banquet and get your facts straight

This is my favorite dish at our local Chinese restaurant only difference is they serve there's on dry Chinese noodles and put peas in sauce but they do use canned mushrooms. What is your experience with toaster oven air fryers.

Nice try for your first time making it. It is usually called almond chicken soo guy on Canadian Chinese menus and is usually a chicken breast cutlet battered, covered with brown sauce and almond pieces. I grew up in a Canadian Chinese restaurant and made my fair share of these as a teenager.

@@drummerlovesbookworm9738 Its the sauce common in Cantonese cooking, whether the sauce in a vegetable stir fry, the gravy on egg foo young or the sauce for Cantonese chow mein. It is usually made from soy sauce, oyster sauce, chicken powder and thickened with cornstarch.

Plastic bags have a place and purpose in cooking. Taking the bag and putting it into the freezer will allow you to reuse the starch in the bag without fear since freezing "meat juices" stop them from becoming harmful just like frozen meat is safe. I do this with several of my dredges until the bag or the dredge becomes "wet". Even storing the empty bag in the freezer allows you to reuse the bag for the same meat. That gravy would be fabulous on many different dishes!

I grew up in Ohio and my favorite Chinese dish was War Sui Gai from the Jade restaurant in Columbus. I’ve never seen it on a restaurant since then. It was fried chicken served on a bed of lettuce with a yellow gravy. Oh how I miss it.

I saw them prepare a recipe similar to what you describe on Cooks Country or America’s Test Kitchen on PBS! They said it originated in Ohio! See if you can find it online.

Regarding plastic bag switch...try using large glass mason jar or bowl with plate to secure for shake/dredge. I'm trying to think more like how my great/grandparents would have made food in pre-plastic days. 💛🌏💫

I'm inquiring about this dish. As a kids growing up we loved a dish similiar to this but it wasn't Almond Chicken it was boness chicken breast with mix veg with a light brown sauce

This looks good!! Please pardon me for being in some ways a bit more "I can't be bothered with this or that" on a couple of things! I'll use pre-cooked chicken chunks from Sam's but I will make the sauce as you did! Also, my teeth aren't up to nuts much any more so I'll leave out the almonds but it really does look very very good! I know that fresh ingredients can make a heck of a difference, though! I forget how many years ago I learned that fresh ginger is so much better than ginger in a tube or the squeeze ginger I do sometimes use! Thanks for another great one!!! My absolute very very best wishes to all of you!!! :-)

Top tip: The green onion end with the roots, can be put into dirt and regrown. Saves you money and you can have it grow in your kitchen window over and over again. Same with celery, lettuce, bok choy, etc....

That's very different than the almond chicken my parents made at their restaurant in the 70s. It wasn't battered chicken but white chicken meat with more of a white sauce. That looks good though! I had that same automatic trashcan you have in the background! Costco? 😀

I put my flour or starch in a zip-lock freezer container to shake the meat. It's easier for me to handle and it's reusable. ';D

I love everything you did with this recipe except for using chicken thighs. What is the attraction to them? I don't want to sound weird but I'm a breast man and try to cook with them for everything.
