CRISPY PORK BINAGOONGAN is a Filipino pork stew dish. My version is consists of crispy fried pork belly, lady finger, eggplant cooked in shrimp paste. Ingredients are easy to find in the wet market here in the Philippines and
very easy to prepare yet so delicious. Perfect match with a freshly steamed rice.
Ingredients:
to boil the pork belly
1 cup of water (enough to submerge the meat)
4 cloves of garlic
1 tsp peppercorn
1 tsp coarse salt
600g pork belly
250g eggplants
180g lady finger
5 cloves garlic
1 small-sized onion
1 tsp chili flakes
220g shrimp paste
2 tbsp vinegar
1/2 cup of water
5 tbsp banana ketchup
2 tsp sugar
