Get crispy and bite through chicken skin on your smoker. By following these steps your chicken will be a crowd favorite.
Wash Chicken really well. The key to crispy skin is ensuring that you dry the chicken and skin as dry as you can get it. Then add a fat to the skin in the form of oil or butter right before you add your rub.
Cook at 275 until the last 20 min or so and bump up temp to 325-350 to render the fat under the skin.

Stormy weather makes me hungry and then that chicken was looking so good. My insulated smoker has been on order for ten weeks now from LSG, so hopefully within 30 days I’ll get my phone call to go pick it up.

I’ve owned quite a few smokers over the years but nothing like this thing. I went to pellets for a year didn’t like the flavor as much but loved the sleep. Then started seeing all of the the ones that caught on fire on the internet and the sleep diminished. This thing once at temp will rock for literally days with very little adjustments. The key is drying that skin really well and adding back a little oil or butter on the skin. And a hotter faster cook. 275 the kicking it up to 300+ in the last part of the cook. Chicken has been the best I have ever produced on the IVS.

My IVS is on order. I still have time to make the request to have my valves moved to the right side. I will be using the Fire Board Fan. Do you have any regrets about having them under the table? I personally don't like knee knockers. Thanks for the reply.

No regrets at all. Keeps my FireBoard fan dry and keeps my accident prone body out of the ER. The only con is you can only use a small bucket to drain water. I evaporate all of my water so it is not an issue. 1 gal buckets fit easily. Whichever side you put it on just remember to start your fire on the side with the air at start up. How do you like your mini IVC? DO YOU BURN splits inside? What are the dimensions of the firebox? How deep is the water pan?

I will get you some measurements. Yes I burn splits and chunks under Charcoal. I would not trade it for anything. It’s a tank.

patricia mattie I do not use water when doing chicken as I like crispy bite through skin. Water makes it a little rubbery. I do use it on pork and beef!

You need to have a tasting panel after each cook sesh. You taste it and say it's deelish but you're biased. Everybody likes their own brand.😂✌

Looks delicious but this video alone doesn’t prove crispy, needed to run a knife to utensil over the skin. Crispy skin makes a scraping sound and there should be crunch when you bit into it.
