Smokin' Joe's Pit BBQ

On this video, I smoked up some super crispy chicken wings on my Yoder YS640 pellet smoker. The rubs I used were from R Butts R Smokin and a rub sent to me by Kent at Daddy Dutch BBQ. I ran my smoker for 1 hour at 375° and 10 minutes at 450°. Wait for the smoker to hit 450° and then start the 10 minutes.

This video was so motivational. After work I ran out to Smart and Final and grabbed two packages and also bought Pappy's Spicy rub. I used you idea of the bag to mix it in. I have a small electric smoker and forgot to raise the temp earlier to 375. I just smoked them for 2 1/2 hours and let the temp keep rising. The family and myself loved these as we set out different sauces like ranch, Buffalo Wild wings garlic and Sweet Baby Rays. Thanks again for vid!

Those looked outstanding! Throw in some BBQ Baked Beans, Potato Salad and some Corn on the Cobb and you have a great summer meal! Man I sure wish I was your next door neighbor, lol. Gonna try this technique out for Memorial Day. Can I prep the wings with the rub on & stash the in the fridge overnight (essentially dry brining them)? Love the vid!

Beautiful as always Joe. I'm having trouble with my chicken skin in general. Whether it's wings, thighs or spatchcock bird the skin comes out tough and almost plastic-like, not crispy. I'm cooking on the same Yoder YS640. I'm following your and other respectable BBQ folks directions but consistently getting the same result. I've tried a 'can't believe it's not butter' finish, oil pan spray and nothing at all. I'm flummoxed. Any advice?

Happy Easter Joe! I don't work for them but using a Vortex-style chimney makes chicken parts (especially wings) a breeze. Great, great crispy skin and juicy meat underneath. A great investment for less than $25.

@2:16 Finally someone who properly illustrates how to fully coat meat in a bag by inflating the bag. I've pulled all my hair out 8 times when youtubers squeeze all the air out and struggle coating their meat. Pffffft! Coat the meat in an inflated bag, then squeeze out the air.

Great looking wings Joe! I noticed you didn't use any binder for the rub to stick to the wings. I have been spraying mine with Pam after pulling from the fridge. Do you think that is an unnecessary step? Thanks for all your videos, I really enjoy them!

I've never tried that but if they came out good, keep using it. Wings are usually moist in the surface so I didn't add any binders. 👍🏼

I've used Mesquite and post oak for pork belly and both were good. I use post oak primarily now. 👍🏼

The secret is to get the temp just right so that it cooks very hot so that it is very crispy just as the temp reaches around 160F or so.

I've never smoked wings on an offset but I'd probably smoke them at 250° for 30 minutes to get some flavor on them first. I'd then move the wings to a hit spot to crisp them up. Great video idea.👍🏼

Did u flip the wings at 40 mins? Or just crank up the yoder to 450 and add 10 min after it got to 450?

I'd have to agree to disagree Brother... I brine my wing's & try to Never use jumbo which your's look very large... I rinse from brine to get tossed lightly with olive oil then my various rubs... And smoke @ 250-275° My brine pushes moisture Out during the cook which steams the skin & helps crisp. I was bitting my teeth praying you weren't gonna do a corn starch crap. LoL But mine go till they are 195-200° and get crispy as ever & Still are dropping wet juicy with only a dry rub. I'm sure going way up to 375° would speed thing's Greatly BUT that would also take smoke flavoring away. Just my 2 ¢... I've placed in the top 3 at every large wing fest comp I've done & I'm Always the only smoked finalist going against fried bird. Stay Safe Bro!
