I think the way it works is that if a logia deliberately dissolves before the attack hits, they can still avoid it, but the reflexive immunity just doesn't work. But yeah, Doffy was just playing with him.

We've seen Akainu, Aokiji and Katakuri receiving attacks with armament, yet avoid getting hit by reacting on time. I'm not saying Croc had observation here, but we know he mastered his fruit, so maybe he reacted by reflex.

This is one of the many scenes that made me believe crocomom could be real. As after hearing that Luffy was the son of Dragon. Crocodile got more invested in the fight. He faced Mihawk and in a way betrayed the government because he was still considered a warlord at the time. He helped save Ace but maybe doesn't want anyone to know he could be Luffy mother if the theory turns out to be true. He went against Akainu who was one of the strongest and most deadly marines to save Luffy why would be do that? And the line where he says he is in a bad mood could be one or two things. One could be he is upset to know he nearly killed his own son. Or is upset he couldn't kill Whitebeard but with the early info I stated I truly believe it is the first option. Now you can say if this is true why did Crocodile try to kill Luffy in the first place. Well, we know Luffy was given to Garp has a child, but we don't know how young he was. And yes, in the anime we probably could tell Luffy age when he is given to Dadan. But I think Garp wouldn't give Luffy away so young so maybe Garp keep Luffy until he was at an age where Garp thought Luffy could be given to Dadan. If the theory is true, you could say that because Luffy was given to Garp very young Crocodile might have not known what his son looked like.
