This is my own recipe. The bread has a crackling crisp crust and a deep, fermented taste and aroma. Ingredients and measurements are listed below - please watch the video for full directions.
4 cups (555 grams) bread flour, scooped and leveled
2 teaspoons (7 grams) instant yeast
2 teaspoons (12 grams) salt
12 ounces (341 ml) beer, at room temperature
1 tablespoon (15 ml) extra-virgin olive oil

My father was a German trained baker and he took as much time as you do to make beer bread. After I made it, the smell and taste reminded me of my childhood. Thank you!

Perfect bread to make right before a snowstorm. I think a nice bowl of beef barley soup would compliment that bread nicely.

The trick is in the gentle kneading. Continuous gentle kneading makes a magnificent dough. I now know how I've gone wrong in the past. TY.

I agree with you, Kevin. I don't believe the beer bread recipes mostly presenting a crumbling crumb texture or the loose crumbs for a crust are breads at all. They're usually bogged down by a bunch of sugar and cheese, which I never enjoyed in the recipes I've tried in the past.

I loved kneading our homemade pizza dough as a youth, and still do! My Mom loved that I loved to, so she could rest. Having 7 siblings, I was always in the kitchen helping❤

Just made this bread w my kids! We had a great time and it turned out amazing. We don’t have a Dutch oven, but we do have two bread pans and we created our own. It worked just as well! Thanks again!

Hi Kevin, I’ve done my pre-storm shopping so I’ll have to wait for a couple of days (need the beer) to make this bread, which looks wonderful. And please please please never think watching extended techniques such as kneading or rolling out pie crust will cause folks to turn off your videos. You have great recipes but I believe watching the process of making said recipes is absolutely critical, especially for me with kneading dough. You give me the confidence to try again and it’s been a long time! Know you are appreciated!

It's so beautiful to see how much the dough can change with just a little time and gentle kneading by hand. Gives the flour time to actually absorb the liquid, and u can feel the difference. I'm an old lady who just recently began my bread making journey, and I absolutely luv it. I've made barm bread. You could taste the beer some, but it was such a delicious flavor, and I never ever liked beer. Great video.

Ohmygosh it is such a pleasure to join you in watching all your videos and this one was so therapeutic to watch the transformation of dough making. I had a mostly fail at making a pandemic gf sourdough bread last year. I've made plenty of cake like quick breads. My Mom used to take one of my Dad's Schlitz cans and make beer bread. It was very doughy and moist but we liked it. Probably smothered in the ubiquitous margarine of the time circa 1976. Thankyou for showing the time sequence of the dough transforming! I have a creuset dutch oven and always wondered if the top handle of the lid was safe for the oven temps. This recipe is really gorgeous. What a beautiful creation! 💛🧡❤️

Yummmm! The loaves look amazing. I bet they tasted great and your kitchen smelled wonderful. I was more on top of my bread-making during the height of the pandemic but have since fallen off the wagon. I think I need to hop back on the bread bus! Thank you for the detailed and thoughtful tutorials!

Greetings from Australia, Kevin. I tried this recipe today using beer that my son bought me that, in all honesty, I would never drink. I didn't use a dutch oven, but opted instead to go for the main oven with a tray of water at the bottom to give the bread some crispness. It worked well too, so thanks Kevin. The aroma in the kitchen was amazing. Your focus on kneading is the secret to this, I think... congratulations on another success!

Wonderful! Can’t wait to try this. Kevin, re: kneading bread. Back when I lived up North I baked bread. At the time I taught elementary music, and while I loved it and the kids, face it - not every day is a delight! (Especially after a couple of weeks of -40 indoor recesses!) I found that going home and kneading bread was the BEST therapy for getting your frustrations out. Just SLAM that dough on the counter! But then I’d have four loaves of bread! So the next day I’d take the 3 extra loaves to the staff room, where they were happily devoured. In fact, I started to suspect that the teachers would get their classes wound up before coming in to my room, just so they’d get to have fresh bread the next day! LOL

Just made this in a bread machine. Came out great. Very soft. Definitely can taste the ale. Used the recipe exactly except for salt; used only 1 tsp salt.

Good morning Kevin from our farm in New Hampshire. Snow on its way! Our kitchen wood stove, Matilda, is blazing away! She may get up to temp to bake this rustic bread. Your recipe is great! And YES, we are watching :-) I wonder if I can use hard cider. Will check if I have any beer. I too, cook with beer for my Yankee pot roast. Thank you for that excellent demonstration of bread kneading. Like that you are a "bread slammer" ! Yes, it is therapudic. My grandmother gifted cooking and baking on to me. Recipe sounds easy and bread looks great. Will try the recipe with two slight variations; whole wheat flour and lager beer which is the preferred type of beer here in Guatemala.

I'm making this today...dough is ready for the rise...I'm at high altitude so I just used 1 tsp instant yeast, snd I used AP flour ( no bread flour in the house)🤦‍♀️ It's cold today, snowing and hailing. I'll check back later and update you. Take care, I love watching your video's and making your recipes. I've made the white bread and I made the little lemon meatballs...my picky grandsons loved them.

Use a pizza stone with a stainless pot upside down on the stone over the dough! I do this with sourdough. I’m going to try this beer bread!

Watched again, this time I make it. I added shredded unsweetened coconut, dried minced onion, and small chunks of very hard parmesan cheese. preheating dutch oven to 450 now. No doubt, the waiting is the hardest part.

Hi Kevin! I REALLY enjoy watching your videos! Thank you for keeping them coming. I made this bread from your other video last night (the video with the instant pot chicken and granola - they both look so delicious, I'll have to try them!). That video wasn't as detailed as this one on the bread instructions, so I'm glad I found this one. I'm also at higher altitude (about 5900ft). And since my Dutch oven is about half the size of yours (I have the Belgian Descoware oval covered enameled cast iron Dutch oven, which is perfect for just the two of us), I made half your recipe. The bread had a delicious flavor, but came out rather flat and dense. I attributed this to the fact that I did not make any adjustments for high altitude, I did not kneed the dough long enough (in this video you say it should be about 10 mins., which I don't mind at all but I thought I was supposed to kneed it LESS or it might become tough - now I know to do it longer but gentle), and I only preheated the Dutch oven in the oven for 10 mins. So, I'll make it again, most likely today, and this time I will correct all the mistakes I made that I mentioned above. I will also use bread flour instead of all purpose. However, I would love to know what, if any, adjustments I should use for high altitude? And also, since I'm making half the recipe, I baked the bread for 20 mins instead of 30, but when I looked at it, I decided to give it 5 extra mins. Then the 10 extra without the cover. So this time, I'm tempted to check again after 20 mins. of baking because I'll keep the Dutch oven preheated correctly for 30 mins., so it will be hotter. Then I'll still do maybe 7-8 extra mins. to brown at 400 without the cover. If I don't hear back from you on the high altitude adjustments, I won't make any because I wouldn't want to spoil it if I go the wrong direction, so I'll just correct all my mistakes and let you know how it turns out! 😃 But I'll be watching for your answer for the next couple hours in case your suggestion pops in, before I get started. Thank you again! 🍞😋💗

I did it! And I wish I could share a picture here because it's so beautiful, and tastes like heaven! I did correct all my mistakes that I mentioned earlier, and I did make some high altitude adjustments that I looked up on Google (more moisture, so almost 7 oz of beer, and hotter oven temp but shorter baking time). I'll have to try this ive been trying lots of breads over last few months but I do know I need more practice kneeding correctly

I made this the other day but unfortunately had an oven failure so I ended up refrigerating it over night and rolling it into balls and making dense little goofball sized rolls that I baked at 400 rather than 450. That said, the flavor is wonderful and I will give this another try after I clean my oven 😂

You kill me Kevin😜 here I go again.... See I just cannot resist making you different loaves, English muffins etc. The potato bread was soo yummy and didn't last long in my home..... However this beer bread is my next task😋.. Loaf and best wishes 🤗🍞🥖🇿🇦

I’m kneading right now. My bread flour from Azure-standard is more of a whole wheat. I hope it works? I’m going to serve it with your stew you made with vegetables on mashed potato only mine will have cooked rutabaga added from my garden. It’s Jess’s favorite on Roots and Refuge Farm.
