Weirdly enough, this episode inspired me to make risotto. I used the episode as a rough guide. I basically did a Guerro and just tossed appropriate-seeming shit in a pan. The risotto turned out fantastic. And I didn't even let the rice breathe.

I have never heard of a recipe that asks you to let your rice breathe. My best guess is that you have to let the dried mushroom stink blow away.

Have you tried Rice a Roni? Comes in a bunch of flavors, and all of them have complicated directions, but they taste pretty good. We tried several of them for the first time last week, and we were surprised.

Risotto takes 30 minutes to cook, so I have no idea what the hell you guys were doing. Also, risotto should be wet enough that it's impossible to pile, it should flow on the plate.

Then I suppose you've never eaten risotto in Italy, or made by an Italian chef. Please read this, he's completely right, the perfect consistency of risotto is like lava: www.seriouseats.com/recipes/2011/10/how-to-make-perfect-risotto-recipe.html The stodgy pile the guys made in this episode wasn't risotto, it was pet food.

The only angle on the rice breathing is maybe to let it lose that plastic / old bag air taste that would be more prominent if you just dump it in.

For the breathing for 30 minutes step. There is no point, the manufacturers only put that there to see how many people are stupid enough to actually do it.

It sounds like the rice has been desiccated, so it needs moisture from the air to get all the way through the rice without turning it to mush.

Risotto is one of those things I avoid when eating out, like polenta (spell check want's to turn 'polenta' into 'tadpole', ha ha). I avoid restaurants that serve them in the first place. But this is only because I am dirt poor and don't eat out. This video was fun to listen to as I made coffee and pooped. Youuuuu, you make poopin' fun, it's all I want to do, youuuuu, you make poopin' fun, it's all want to do....Coffee's ready!

"This person has a narrow urethra." -- *_Ah tail yew whut._* I do have a l'il science for ya -- punch another hole on the opposite side of the can lid so that the pouring will be easier. The second hole lets air flow in to replace the departing liquid, instead of the air trying to come in through the single hole and getting into a fight with the departing liquid. The rice doesn't have to breathe, but your container of fluid pours a lot easier when it can. :3

Rice is a stractch so best to let it dry and boil with oil so it dose not stick same with potatoes do them early so u can wash and let dry esp deep frying them because moisture same with meats too like chicken clean dry let set for a minute

I can tell you what you did wrong. First, you used canned broth. Second, you used pre-packaged parmesean. You might as well have used the Kraft Parmesean, it is pretty much he same thing. About 20% sawdust. 3rd, you didn't aereate the rice. You were to let the rice sit in an open bowl. The oxidation of the rice is an important step as it lets it cook more evenly. 4th, you used too much parmesean, and too much garlic. Oh and 5th and more importantly, you weren't drunk enough.

More than likely they pumped nitrogen in the bag. Rice could have absorbed the nitrogen. Leaving could level out the gases in the rice.
