Mrs Debbie I’m making your tripe and bean recipe right now it’s on the stove simmering. I’m rewatching to make sure I didn’t forget anything 😃 I’ve been so excited all week in angst to prepare this dish. I mixed my tripe with one pack of hog maws and curried them together which I’ve cooked hog maws before and figure same cook time, why not. Nice one Ms Debs we call it 'Shaki' in the Yoruba language of Nigeria, we use it in most of our stews with other meats, my mum only used beef tripe, cleaned it as you did, seasoned then boiled ,then fried or roasted before adding to the stew, can't wait for part 2

I am suffering from something I don't know what it's called but it is when you can't get some of that tripe debbie when you eat that if you go for a checkup you will be in top shape everything you use to season is medicine the marjoram is good for everything including sleep back in the day when you buy a bundle of escallion they would put a few pieces along with some thyme my mom always put in the beef soup anyway I am waiting for my green gungo rice and peas with curried tripe veg and a piece of fried chicken bless up sis

Thanks for sharing your way of cleaning .. I boil mines and throw the water off. Lime and salt is a bajan thing we clean all our meats and fish so well not beef or lamb for me tho...blessing 🇧🇧

Yeh, I too, would be tempted to skip the scalding and just boil it for 5 mins then one last wash with the lime or lemon water, then season it up.

I am not so weird after all, I did it the same way only when washing it I use this powder with lime that makes it look completely white and leaves it smelling fresh and nice after cleaning (it's an Italian product that has baking soda in it) I also buy it in one piece never cut up, because they could slice up pieces from different age cows, so I never buy Oxtails, Goat meat, etc.... in pieces and I have never tried the sage spice on it, though it is not something I get to cook often nowadays🖤
