I used to work for a company that warehoused cheese for a local grocery store chain. 60-70lb wheels of Parm reggiano were a normal item, but sometimes we would get the 300lb wheels, and for a grand opening of a new store they ordered a 1200lb wheel of aged cheddar that was made into a carving of the city skyline. Cheese!

That's Padano, not Reggiano. 9 Month is the sellable age for this cheese and shouldn't go above 14. The older it gets the more it crystallizes. For topping on ragu or other dishes where it's grated 9-11 is ideal as it's creamier and buttery enough to melt nicely. In contrast Reggiano changes rapidly between 10 and 18 month.

@@Magistrella Hanno preso quello più giovane. Così facendo anche il più economico. Sicuramente ci sono dei vantaggi per un formaggio più giovane. Quello di 11 Mesi avrebbe già fatto tanto. Inoltre Grana Padano viene stagionato fino a 24 Mesi. Con il passare dei 20 Mesi conta come Grana Padano Riserva.

WRONG!!! To prevent spoilling the cheese is better to cut it in vertical small slices. This preserves the cheese quality for much more time cause avoids humidity

There was an incredible market near me where they used the entire wheel as a mixing bowel, so they would scrape up layersof cheese, then toss in the food, be it pasta or fries and mix it round and round, absolutely coating the food in fresh cheese. It was absolutely incredible, even if I could feel my valves clogging with every bite

Yeah you'd need to find like 20 people minimum to share it with. And those 20 people would all need to be huge cheese lovers. This cheese isn't as good as parmesiano regiano, but it's still pretty dang good and a little more affordable. I'd buy a wheel aged longer though, a year minimum

Usually when cutting it open you would typically have many of those specific knives to help leverage it open and use one to open particularly harder spots.
