此视频的食谱可以做:
This video recipe can be made:
1. 小豆沙饼40粒 Small Tau Sar Piah 40 pieces
➡️水油皮Water dough 7 - 8g / 1个
➡️油酥Oil dough 4 - 5g / 1个 ➡️馅料Filling 12 - 13g / 1个
或者or
2. 大豆沙饼30粒 Big Tau Sar Piah 30 pieces
➡️水油皮Water dough10 - 11g / 1个
➡️油酥Oil dough 6g / 1个
➡️馅料Filling 16 - 17g / 1个
3. 烘烤和时间Baking time:
第一阶段First stage
温度Temperature :180°C
时间Duration :10 - 12分钟
第二阶段Second stage
温度Temperature:160°C
时间Duration : 25 -30分钟
💡温馨提醒:
1. 豆沙饼要烤到完全干透,隔天回油后才会又酥又脆。
2. 想要表面龟裂深褐色的豆沙饼,一开始就刷上蛋液才进烤箱。
3. 豆沙馅炒到太湿,烘烤时皮会裂开爆浆的。以200g绿豆仁为例,炒好的豆沙馅,个人觉得介于480 - 520g口感最佳。
豆沙饼食谱 Tau Sar Piah recipes :
A. 咸豆沙馅Salted bean paste filling
红葱头 5粒 shallots 60g nett
煮菜油 50g cooking oil
绿豆仁 200g mung beans
细砂糖 110g fine sugar
胡椒粉 半茶匙 white pepper 1g
食盐 8g salt
➡️炒好后约500g
B. 油皮/水油皮 water dough
普通面粉 180g plain flour
无盐牛油 65g unsalted butter
细砂糖 半茶匙 fine sugar 3g
清水 65g water
➡️面团重约312g
C. 油酥 oil dough
普通面粉 120g plain flour
无盐牛油 30g unsalted butter
玉米油 30g corn oil
➡️面团重约180g
D. 刷面蛋液 egg mixture
蛋黄 1个 egg yolk
清水 1茶匙 water 1 tsp

Amazing I managed to make the traditional Tau Sar Piah 😘 From start by preparing the salted bean paste filling till end. I spent abt 6 hours. Very tiring, but worth it. Indeed delicious. The taste same as outside stall selling. Thanks for sharing such wonderful recipe ❤

Thank you for my favourite recipe. Greetings from Penang, Malaysia. This biscuit carries the name of my hometown. Great you gave details about each step as I am a fresh rookie where baking is concern. May I know why both corn oil and butter are used to make oil dough? Can I use only one? Appreciate your advice!😊❤

Hi 😊Sorry for late reply. First, I must let you know I not a pro for Tau Sah Piah. Actually this recipe I found it online many many years ago. I tried many times and like it very much. So I have no ideas if just use one type of oil for the oil dough part oh. 😊
