It's a good thing you bought the fancy puller, so you could pull that bearing back off without damaging it.

I ended up pulling it 3 times shooting that video, so it's real good thing I bought the puller. I'd already had to pull it twice before forgetting the shims.

Even though you bought the bearing puller, it was best case you noticed the missing shims before the bearing was fully seated. I forget enough stuff like that and I'm not even filming at the same time.

Is it possible to use a hammer and seal driver to put the side bearings on? Obviously with care, making sure to push it down on the race side and not damage the bearing cage. As well as making sure it goes on squarely. Also, what is the likelihood of needing more or less shims to get proper lash if the ring gear is swapped to a locking differential? I'm using the same ring gear that came out of it.

Changing the carrier I think it's almost certain you'll need to change shims. You can probably put the bearings on with a hammer and cup or socket, but you'll never get them off intact without a special tool
