How to make a Japanese rolled omelette ( Dashimaki Tamago )
as demonstrated by the Master Chef at the Shunraku Kaiten Sushi Restaurant, Shunraku on Route 36 Eniwa Hokkaido.
材料 Ingredients
玉子 eggs 8
砂糖 sugar 30g
塩 salt 3g
みりん Mirin 1tsp (1パイ)
酒 Sake 1 tsp (1パイ)
カツオダシ Bonito Stock 180ml

@benchmstr An omelette simply needs to be beaten, and then fried without being stirred. Fillings are just often used. This is a "Japanese omelette" or tamagoyaki.

I knew instinctively and from training that there had to be liquid in the eggs. The Bonito stock explains what the liquid is. The eggs by themselves are to dense and seize up when they hit the hot pan. By adding water or in this case bonito stock to the eggs, they stay runny enough to allow a thin omelette to be prepared. I am so happy to find this video. The lessons on the rolled omelette in other videos miss this important ingredient of liquid to the eggs. Wow. I just saw more of the video. He did not just start rolling the omelette with a flick of his wrist and 2 chopsticks. What? You can't do that. He did!

Yea.. Me too.. I'm not only amaze, I literally envy them. Sure, they may have gotten nuked twice, but look at them now. You don't actually NEED a square pan, it can be made in a regular circular pan, the important thing is the technique. No, it won't have perfectly straight edges(and if you're not cooking professionally it doesn't really matter), but you can get the right overall shape, and the important thing is the striated layers of egg, and the taste and texture(how well you cooked the egg), of course.

I love Japanese omelette, it's just so different with western style, it doesn't need any more ingredients like tomato, onion, mushroom, etc. to make it flashy and tastier, its sweetness and fluffiness are already the main reasons why people love it

Western don't have the time do such complicated steps because it has something to do with the culture of fast life. They instead resort to adding stuff to give the food some spice so at least they will enjoy it. Just look at the time, it took 5 min to cook a perfect and consistent omelet that require tools you don't find on your average household. It also had more steps in cooking, so as repetition having different time depending on the heat change cause by the previews step. Do you really expect western to stay in the stove for 5 min doing the same exact steps repetitively? mvpmickey1 The Japanese culture is like you said completely different than western culture. The Japanese people pride themselves in the work they do, whether it is cooking Omelettes or ironing cloths, they do it with the upmost sense of pride, technique and quality. This is also the same reason why Japanese products are superior to their western counter parts in every way.

Carbon Bonds I'm not highlighting Japanese but rather being frank about the west. Its actually the whole Asia in General since they influence each other. Reason is Eugenics. The west had pride in their so called Superiority so they had slaves do every work. When it was outlawed, western suffered cause they don't know HOW to work. The culture is reflected to every action they do even in modern times. You can clearly see Eugenics on cooking, its like drop whatever ingredient, doesn't matter how and what, then just eat the dam dish as long as it edible. Meanwhile in Asia, cooking is considered holy specially if you serve the government and royalty. Chef kills themselves for failing in cooking. A simple noodle puller shuts down their business for weeks, not minding they are losing money, if ever they feel like the noodle they made themselves taste a little different than usual. Every job is taken seriously and its considered honorable to attain perfection.

Knowing this technique and having the proper tools has resulted in my being hired into fine dining positions twice in my career. There are as many applications for Tamagoyaki outside the traditional ones as you can imagine. Great demonstration!

Long Tran I’m american though. ;-) The way to hold chopsticks will come naturally to those who try to use them longer than five seconds. They’re literally my go to when eating noodles, rice, and small meats.

+Paulie That's an interesting observation. I can't remember the location of the video it but was an elderly Japanese fellow with two assistants, posted in several parts over something like a week or two probably more, making a sword in his hut, it was rather hypnotic.

I'm Japanese. This Omlette is some of Japanese home cooking. I like foreign Omelette,but I like Japanese this one too. If you come to Japan,you can eat Japanese Omelette in earnest.
