Of course not, they both need to be filled with staff at same time. I show you my staff in main in vid, i use them now, so i only have to fill wasabi and best guys are in branch after that so they get no angry customers and make more money cuz their lvl's help with profits and main branch they don't.

Kinda cuz the higher the level the more he can make.. But it is a small gain and not worth it until you have all your upgrades done. Also you can just level 1 of the other guys that will get 9/5 so you can use drea as a server cuz theirs very few that have 2 server skills.

In my tests i was seeing a +1K profit a night per level up on a 30k range meal.. 28k night, lvl up 29, relaod, lvl X2 30k, X4 32k...

Ya, until i get someone other then Drea up to rank 9 5* so i can stick him on service, with a rank 8 recipe i swap out with ninja girl instead.
