Truffle businesses usually fail in new york within the first 5 years. God i hope this guy succeeds, and if he fails i hope he learns from it and comes back better. One of the worst things that can happen is when a young entrepreneur lose hope and gives up. I'm a restaurateur and I've seen that happen many times, you can tell when their business is nearing from their eyes.

He's been around for the past 6 years, I think it's in large part to diversifying his product offerings while maintaining high quality. He was smart enough to build a strong base and reputation with his clientele then strategically branch off to more offerings; He's the sole supplier for 80% of all Michelin restaurants in Manhattan not including the rest of the unamed restaurants and private clients. Caught three felonies in July. Figured it was about time to throw the towel in besides i have my whole life still and i don't want to spend it in prison. I started off at 14 selling half ounces. By 19 i was selling a pound+ a week every week, every month, year round. I just turned 21 in June so i have/had been selling for 7 years. Good thing is i finally feel like ive grown up enough to leave it behind.

At the time i was paying $5k every week for one shipment of about 900 "units". I would charge a flat rate of $10 a unit and it would take me just about ten days to finish one shipment. So if you do the math it was very profitable and very fun. But you know, if you play with fire eventually you'll get burned.

Imagine a kid with a ball walking by the sidewalk, then suddenly the ball drops from his hands for some reason and goes to the street, the kid follows the ball and BOOM! An accident that could had been avoided by fucking driving properly looking at the road and having at least one fucking hand in the steering wheel!!! And that's only an example, kids don't fucking care about safety, they are fucking kids!!! There are lots of reasons why one could run suddenly to the street. Has happened and will continue to happen.

Mushroom foraging used to scare the shit out of me. We had a family near where I lived that died from eating the wrong mushrooms. But when I was in the girls scouts, they taught us about safe and edible mushrooms in Maryland. It’s actually very easy to tell even for mushrooms that look fairly identical to dangerous ones, if you know the warning signs. Also, they sell cheap mushroom growing kits on amazon which are ALWAYS super fun. We had these mushrooms growing in the lot next to my parents house and one night this man pulls up and sheepishly asks if they were cultivating them. When my dad said no, he asked if he could take them. My dad was a bit worried to agree as he wasn’t sure if they were poisonous. This guy leaves, comes back with two onions, and goes through all the mushrooms. Each one that was bad, he’d put a piece of onion on top of it and some onion around the base and said it’d take care of it. Sure enough the next day these mushrooms were black and rotting. They haven’t had any come back. Our neighborhood thinks bunnies are spreading the fungi somehow in their poop maybe because they always grow where the bunnies hang out. Overall mushrooms are pretty fascinating. And truffles are so pretty cool. I’d love to one day be able to forage for them. I have a friend who, I believe, uses basset hounds and trained pigs to find them in their country.

I was really impressed I knew many of the mushrooms he unpacked. Since I was a young child my uncle and my dad took us kids to the forest every fall because they know which ones are edible. We picked many mushrooms and my grandma cooked delicious dinners. Never knew they were that expensive and sold around the globe
